Brookies are brownie bars with a chocolate chip cookie layer pressed on top, baked together in one 8×8 pan. You get two textures — dense, fudgy brownie on the bottom and soft, buttery cookie on top — without making two separate batches on two separate days. They cut into 12 bars, keep well, and disappear fast at any table.

Before you start

The one thing that actually matters here is the temperature of your butter — and it’s different for each layer. The brownie layer calls for melted and slightly cooled butter; if it’s too hot when you add the eggs, you’ll scramble them and lose that glossy, fudgy texture. The cookie layer needs softened butter at room temperature so it creams properly with the sugars and holds its shape when dolloped over the brownie batter. Pull your cookie-layer butter out 30–45 minutes before you start. Get that right and the rest of the recipe is straightforward.

Common problems and fixes

  • Cookie layer sinks into the brownie: This usually means the brownie batter was too warm when you added the cookie dough. Let the brownie batter sit for 5 minutes after mixing before spreading it in the pan, then add the cookie dollops.
  • Gooey, underbaked center even after the full cook time: Ovens run differently. If a toothpick comes out with wet batter (not just moist crumbs) at 35 minutes, give it 3–5 more minutes. The bars will also firm up significantly as they cool, so don’t judge doneness straight from the oven.
  • Dry, crumbly cookie top: Overbaking is the culprit. Pull the pan when the cookie layer looks just set and is barely golden — it will continue cooking on the hot pan out of the oven. Skip the extra bake time if the edges look done even if the center seems soft.
  • Bars fall apart when sliced: They need to cool completely before cutting — at least 1 hour at room temperature. Rushing this is the most common reason for messy slices. Use the parchment overhang to lift the whole slab onto a cutting board first.
  • Cookie dough tears the brownie layer when you press it down: Don’t press hard. Flatten each dollop gently with damp fingertips. The cookie dough spreads during baking and will cover most gaps on its own — skip the garnish of extra chips pressed on top before baking, not worth the extra fuss.

Keeping and reheating

Store cut bars in an airtight container at room temperature for up to 4 days — they actually taste better on day 2 once the layers have settled. For longer storage, refrigerate for up to 1 week; bring to room temperature before eating or the brownie layer gets firm and dense. These freeze well: wrap individual bars tightly in plastic wrap, then place in a zip-top bag and freeze for up to 3 months. Thaw overnight in the fridge or for about an hour on the counter. If you want them warm, 10–12 seconds in the microwave is enough — any longer and the cookie layer gets tough.

For the Brownie Layer:

  • ½ cup unsalted butter melted and slightly cooled
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoon pure vanilla extract
  • ⅓ cup unsweetened cocoa powder preferably Dutch-processed
  • ½ cup all-purpose flour sifted
  • ¼ teaspoon kosher salt

For the Cookie Layer:

  • ½ cup unsalted butter softened to room temperature
  • ½ cup brown sugar light or dark, packed
  • ¼ cup granulated sugar
  • 1 large egg room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour sifted
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • ¾ cup semi-sweet chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang on all sides for easy lifting after baking.
  • Prepare the Brownie Layer: In a mixing bowl, whisk together melted butter and granulated sugar until glossy. Add eggs one at a time, whisking for about 30 seconds after each addition, followed by vanilla. Stir in cocoa powder, flour, and salt until just combined—do not overmix. Set aside.
  • To Make the Cookie Layer: Cream softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed until light and fluffy (about 2–3 minutes). Add egg and vanilla extract; beat until smooth. Mix in flour, baking soda, and salt, then fold in chocolate chips using a spatula.
  • Spread the brownie batter evenly into the prepared pan. Then, using a spoon or your hands, drop small dollops of cookie dough evenly over the surface. Lightly press the dough down to flatten slightly; it will spread more as it bakes.
  • Bake in the preheated oven for 33–35 minutes. The top should be golden and set, with a toothpick inserted into the brownie section coming out with a few moist crumbs (but no raw batter). If the cookie top starts to brown too quickly, tent loosely with foil during the last 10 minutes.
  • Let brookies cool completely in the pan before lifting them out using the parchment. Slice into bars using a sharp knife—cleaning the blade between cuts helps maintain clean edges.

Can I use a 9×13 pan to make a bigger batch?

Yes, but you’ll need to roughly double both layers and reduce the bake time by about 5 minutes since the bars will be thinner. Start checking at 28 minutes and pull them when the cookie layer is just set.

Do I need an electric mixer, or can I mix by hand?

The brownie layer is easy to do by hand with a whisk. The cookie layer really does benefit from an electric mixer — creaming butter and sugar by hand for 2–3 minutes is tiring and you’re less likely to get the right texture, which affects how the cookie layer holds up over the brownie.

Can I use a boxed brownie mix for the bottom layer?

You can, and it works. Prepare the mix according to the package directions for a fudgy result, then proceed with the homemade cookie layer on top. The bake time stays roughly the same, but check a few minutes early since boxed mixes vary.

How do I know when the brookies are actually done baking?

The cookie layer should look set and pale golden, and a toothpick inserted into the center should come out with moist crumbs — not wet batter. The bars will look slightly underdone in the middle when you pull them; that’s correct, they firm up as they cool.

Can I make the two layers ahead of time and bake later?

Yes. Both batters can be made up to 24 hours ahead and stored separately, covered, in the fridge. Take the cookie dough out 15 minutes before assembling so it’s soft enough to dollop. The brownie batter can go straight from the fridge into the pan.
