This is a savory French toast built like an omelette — thick bread soaked in an egg-and-cream mixture packed with jalapeño, bacon, mushrooms, and parmesan, then pan-fried until the outside is golden and the cheese forms a crust. It takes 20 minutes, uses one bowl and one pan, and the egg mixture scales up easily so you can cook a batch and have breakfast sorted for the next couple of days.

What makes this version work

Two things actually matter here. First, the fillings go into the soak, not on top afterward — dicing the jalapeño, mushrooms, and bacon small enough that they cling to the bread surface means every bite has heat and smokiness baked in, not just sitting on the outside. Second, the parmesan goes on before the flip. When it hits the hot pan, it melts directly onto the bread and sets into a thin, slightly crispy layer. That texture contrast — firm cheesy crust against soft egg-soaked bread — is what separates this from plain savory French toast. Neither step adds time, but skipping either one flattens the result.

Shopping notes

  • Hickory-smoked bacon: The smokiness does real work against the jalapeño heat. Regular bacon is fine, but plain unsmoked bacon makes the flavor noticeably flatter. Turkey bacon works if that’s what you have.
  • Jalapeño: Heat level varies a lot between individual peppers. If yours looks very dark green and thick-walled, it’ll likely be hotter. Remove the seeds and white membrane if you want moderate heat; leave them in for more punch.
  • Chili salt: Not always easy to find. A mix of flaky sea salt and a pinch of cayenne or red pepper flakes does the same job — skip the specialty store trip.
  • Parmesan: Pre-grated from a bag won’t form as clean a crust because of the anti-caking coating. A quick grate from a block makes a difference here.

If something goes sideways

  • The fillings fall off when you flip: The diced pieces weren’t pressed firmly enough into the soaked surface before the bread went into the pan. Use your fingers or the back of a spoon to press them in right after dipping, and again after you lay the slice in the pan.
  • The bread is soggy in the middle after cooking: The slices were too thick or soaked too long, and medium-low heat wasn’t low enough to let the inside set before the outside browned. Lower the heat slightly and give it an extra 30–60 seconds per side with a lid on to trap steam and cook the center through.
  • The parmesan burns instead of crisping: This happens when the pan is too hot when you flip. Let the heat drop for 30 seconds after flipping before it gets back up to temperature — the cheese needs gentle heat to melt and set, not high heat.
  • The egg mixture runs out before the last slice: The bowl was too shallow and the mixture spread thin. Use a wide, deep-sided dish and tilt it so the mixture pools. If you genuinely run short, whisk one more egg with a splash of cream and combine it with whatever is left.
  • The bread tears when you lift it: It soaked too long or the bread was too fresh and soft. Day-old bread handles the soak much better. If it tears in the pan, press it back together gently — it will still cook fine and taste the same.

Storage and reheating

Cooked slices keep in the fridge for up to 3 days in an airtight container with parchment between them so they don’t stick. To reheat, use a dry non-stick pan over medium-low heat for 2–3 minutes per side — this brings the crust back and avoids the rubbery texture you get from the microwave. The microwave works in a pinch (60–90 seconds), but the exterior goes soft. You can also freeze cooked slices for up to 1 month; thaw overnight in the fridge before reheating in the pan. The egg mixture itself can be made the night before and kept covered in the fridge — give it a stir before using since the fillings settle. Skip the avocado garnish if you’re prepping ahead — it doesn’t hold and isn’t worth the extra prep at serving time.

Ingredients
 
 

  • 4 slices bread
  • 3 large eggs
  • 1 tablespoon neutral oil or butter (14 g), for frying (if needed)
  • 1 tablespoon heavy cream (double cream / thickened cream)
  • 1 medium jalapeno fresh ; finely diced
  • 2 medium button mushrooms finely diced (about 50g / 1.8oz)
  • 1 rasher hickory-smoked bacon diced
  • 1 tablespoon chives fresh ; finely chopped (or herbs of your choice)
  • ¼ teaspoon onion salt or to taste
  • 1 tablespoon grated parmesan or cheese of your choice
  • 1 medium tomatoes sliced, for serving
  • ½ medium avocado sliced, for serving
  • ¼ teaspoon chili salt or red pepper flakes, for finishing

Instructions
 

  • In a wide, shallow bowl, whisk together the 3 eggs and 1 tablespoon of heavy cream until fully combined and slightly frothy.
  • Add the diced jalapeño, mushrooms, bacon, chopped chives, and onion salt to the egg mixture. Stir to combine evenly.
  • Dip one slice of bread into the egg mixture, letting it soak for about 15-20 seconds per side. Ensure both sides are well coated and some of the diced ingredients cling to the surface. Repeat with each slice.
  • As you lift each soaked slice, press some of the diced ingredients onto the surface so they stick. Place the slices face down in a non-stick frying pan over medium-low heat. If your pan is not non-stick, add a thin layer of butter or neutral oil to prevent sticking.
  • Once all slices are in the pan, spoon any remaining egg mixture and diced ingredients from the bowl over the top of each slice. Sprinkle the grated parmesan evenly over each piece.
  • Cook on medium-low heat for 2-3 minutes until the bottom is lightly golden and the egg has set. Carefully flip each slice with a spatula.
  • Cook the second side for another 1-2 minutes. The parmesan will melt and form a light golden crust on the surface of the bread.
  • Transfer to plates and cut each toast diagonally. Serve alongside sliced tomato and avocado, and sprinkle with chili salt or red pepper flakes to finish.

My parmesan isn’t forming a crust — what’s going wrong?

Most likely the cheese was added after flipping rather than before, or the pan was too cool. Sprinkle the parmesan onto the top surface of each slice while the first side is still cooking, so it has time to start melting before it contacts the pan on the flip.
