These are twice-baked potatoes filled with melted mozzarella, fresh herbs, and a little green chilli heat. You microwave the potatoes first to cut the total time down to about 50 minutes, then finish them in the oven so the tops go golden and the cheese stretches when you pull them apart. Six ingredients, eight halves, and almost no cleanup — that’s the honest case for making these on a weeknight.

Before you start

Two things actually matter here. First, pierce each potato deeply and all over before microwaving — at least 8 to 10 times with a fork. Steam builds up fast inside a whole potato, and a burst potato is a real mess and a wasted dinner. Second, leave a visible rim of flesh inside the scooped shell, roughly the thickness of your little finger. Too thin and the skin tears when you spoon in the filling; too thick and you lose room for the cheese. Get those two things right and the rest is straightforward.

Common problems and fixes

  • Filling slides out of the shells while baking: The potato flesh was probably too wet. After scooping, let the shells sit cut-side up for a couple of minutes to steam off some moisture before mixing the filling. A drier mash holds its shape better once stuffed.
  • Cheese turns rubbery instead of melty: This usually means the oven wasn’t fully preheated, so the potatoes spent too long at a low temperature before the cheese started to melt properly. Give the oven a full 10 minutes to reach temperature before the tray goes in.
  • Skins are soft and floppy, not firm: The microwave alone won’t crisp the skin. Make sure the stuffed halves go directly onto a lined baking tray — not crowded together — so hot air can circulate around them during the oven bake.
  • Filling tastes bland: Potato absorbs seasoning heavily. Taste the filling mixture before spooning it back into the shells and adjust salt at that point, not after baking.
  • Potatoes take much longer than 10–15 minutes in the microwave: Microwave wattage varies a lot. If a knife doesn’t slide in easily at 15 minutes, keep going in 2-minute increments. The size of your potatoes matters too — larger ones need more time.

Smart swaps

  • Green chilli: For younger kids or anyone sensitive to heat, swap the green chilli for a small amount of finely diced mild green pepper. You keep a little freshness in the filling without any burn. Alternatively, leave it out entirely — the herbs carry the flavour on their own.
  • Fresh herbs: If you only have dried herbs on hand, use about one teaspoon total. Dried parsley works fine; dried coriander is a poor substitute for fresh, so skip it and lean on chives or dried chives instead.
  • Mozzarella block vs. pre-shredded: A block of low-moisture mozzarella that you shred yourself melts significantly better than the bagged pre-shredded kind, which is coated in starch to prevent clumping. Skip the pre-shredded if you can — it’s worth the extra two minutes.

Storage and reheating

Leftovers keep well in an airtight container in the fridge for up to 3 days. To reheat, place the halves on a baking tray and warm in a 375°F (190°C) oven for 10 to 12 minutes — this brings the skin back to something close to crisp and gets the cheese melty again. The microwave works in a pinch (about 90 seconds on high), but the skin will be soft. These don’t freeze well once assembled; the potato texture turns grainy after thawing. If you want to prep ahead, freeze the unbaked stuffed shells before the second bake, then bake straight from frozen at 400°F (200°C) for 20 to 25 minutes.

Ingredients
 
 

  • 1 cup potatoes medium-large baking potatoes (about 225g / 8oz each), such as Russet or Maris Piper
  • ½ bowl mozzarella cheese (for rubbing)
  • 3 tablespoons herbs chopped (such as parsley, chives, and coriander/cilantro)
  • 2 medium green chilli finely chopped (seeds removed for less heat)
  • ½ teaspoon black pepper powder
  • ½ teaspoon salt

Instructions
 

  • To begin making mozzarella stuffed baked potato, take all 4 potatoes without peeling them and pierce with a fork.
  • Microwave the potatoes on high for 10-15 minutes, turning halfway through, until a knife slides easily into the centre. Allow to cool for 5 minutes until safe to handle. Cut each potato in half lengthways.
  • Carefully scoop out the potato flesh into a mixing bowl, leaving about a 5mm (¼-inch) thick shell. Add the shredded mozzarella, chopped herbs, green chillies, salt, and black pepper to the bowl. Mix until evenly combined.
  • Preheat your oven to 200°C / 400°F (180°C / 350°F fan-forced). Spoon the mozzarella-potato filling back into the potato shells, mounding it slightly. Place on a baking tray lined with parchment paper and bake for 12-15 minutes until the tops are golden and the cheese is melted and bubbly.
  • Serve immediately while the cheese is still stretchy. Garnish with extra chopped herbs or a sprinkle of chilli flakes if desired.

FAQ

Can I make these in the oven from start to finish instead of using the microwave?

Yes, but it adds significant time. Bake the whole unpierced — actually, pierced — potatoes at 400°F (200°C) for 50 to 60 minutes until completely tender, then proceed with scooping and filling as normal. The total time will be closer to 90 minutes rather than 50.

Can I make these ahead of time for a party?

You can assemble the stuffed halves up to 24 hours in advance and keep them covered in the fridge. Pull them out 15 minutes before baking so they’re not ice-cold going into the oven, then bake as directed — you may need an extra 3 to 5 minutes.

How do I make these less spicy for kids?

Remove the seeds and white membranes from the green chilli before chopping — most of the heat lives there. If that’s still too much, replace the chilli entirely with a small amount of finely diced mild green pepper, or simply leave it out.

Can I use sweet potatoes instead of regular baking potatoes?

Sweet potatoes work, but the filling will be noticeably sweeter and softer, which changes the overall balance. The mozzarella and herbs still taste good with sweet potato — just expect a different texture and a filling that’s harder to mound neatly.

Why does my cheese not brown on top?

Standard mozzarella melts and bubbles but doesn’t always brown deeply on its own in 12 to 15 minutes. If you want more colour, switch your oven to the broiler setting for the final 2 minutes and watch closely — it goes from golden to burnt quickly.
