This is a one-pan dinner built from ground pork, diced russet potatoes, onion, garlic, smoked paprika, and thyme — ready in about an hour with minimal cleanup. It feeds four, reheats well, and uses ingredients most households already have on hand. That last part is the real reason to make it on a weeknight.

The short version of why this works

Two things matter here. First, you cook the pork and potatoes separately in the same pan — don’t skip that step. Browning the pork first builds fond on the pan bottom, and that fond flavors the potatoes when they go in next. Second, patience with the potatoes: 15 minutes over medium heat, stirring occasionally, is what gets you a golden crust instead of steamed mush. Rushing either step gives you grey meat and soft, pale potato cubes — edible, but not what this dish is supposed to be.

Shopping notes

  • Pork mince: Standard supermarket ground pork works fine. Higher fat content (around 20%) keeps it juicy and helps it brown better than extra-lean.
  • Russet potatoes: Stick with russets specifically. Their high starch content is what gives you that crispy exterior. Waxy potatoes like red or Yukon Gold will stay soft all the way through.
  • Smoked paprika: Regular sweet paprika is a flat substitute — the smoked version adds a depth that actually matters in a short ingredient list like this. Worth keeping a tin in the pantry.
  • Fresh vs. dried thyme: Either works. If using fresh, triple the amount called for.

Leftovers and make-ahead

This dish is genuinely better the next day once the flavors have had time to settle. Store leftovers in an airtight container in the fridge for up to 4 days. To reheat, use a skillet over medium heat with a small splash of water or olive oil — the microwave works but softens the potato crust. For longer storage, freeze in portions for up to 2 months; thaw overnight in the fridge before reheating. Cold leftovers also make a solid base for a quick hash: press a portion into a hot oiled pan without stirring for a few minutes to re-crisp the bottom, then crack an egg over it and cover until set. Skip the parsley garnish on leftovers — not worth the extra dish.

Mistakes to avoid

  • Cutting the potatoes too large: Cubes bigger than 2 cm take significantly longer to cook through and often end up burnt on the outside before the center softens. Keep them consistent and close to the size specified.
  • Crowding the pan: If your skillet is smaller than 12 inches, cook the potatoes in two batches. A crowded pan steams instead of sears, and you lose the golden crust entirely.
  • Adding the garlic too early: Garlic goes in after the onion is already translucent, not at the start. Even one extra minute of direct heat before the pork goes in can take it from golden to bitter.
  • Not draining excess fat before returning the pork: Ground pork can release a lot of fat depending on the cut. If there’s more than a thin film left in the pan after browning, tip most of it out before adding the potatoes — otherwise they fry in grease rather than crisping up properly.
  • Under-seasoning the potatoes: The recipe seasons the pork as it cooks, but the potatoes need their own salt when they go into the pan. Taste before you combine everything and adjust — bland potatoes drag the whole dish down.

  • 500 grams pork mince preferably from free-range pork
  • 4 medium russet potatoes peeled and diced into 2 cm cubes
  • 1 cup yellow onion finely chopped
  • 3 cloves garlic minced
  • 1 teaspoon dried thyme or freshly chopped thyme for a vibrant twist
  • 1 tablespoon olive oil extra virgin for a rich flavor
  • 1 teaspoon Paprika smoked for depth of flavor
  • 1 pinch salt to taste
  • 1 pinch black pepper freshly ground
  • ⅓ cup fresh parsley chopped for garnish

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the onion and sauté until it becomes translucent and aromatic, about 5 minutes.
  • Add the minced garlic and continue cooking for an additional minute, stirring continuously to prevent burning.
  • Increase the heat to medium-high and add the pork mince. Break it apart with a wooden spoon and cook until browned, about 7 minutes. Season with salt, pepper, paprika, and thyme as it cooks to build layers of flavor.
  • Once the pork is cooked, remove it from the skillet and set aside. In the same skillet, add a dash more olive oil if needed, then the diced potatoes.
  • Cook the potatoes, stirring occasionally, for about 15 minutes or until tender and golden brown on the outside. Return the pork mix to the skillet, stir to combine, and let all flavors meld for another 5 minutes.
  • Taste and adjust seasoning if necessary. Sprinkle over freshly chopped parsley just before serving.

Can I use a different meat instead of pork mince?

Yes — ground beef or ground turkey both work as direct swaps. Beef gives a richer, slightly heavier result; turkey is leaner and milder, so increase the smoked paprika slightly to compensate.

Do I need to parboil the potatoes first?
