This is a one-skillet pasta with Italian sausage, canned tomatoes, and a splash of cream — the kind of dinner that comes together in about 50 minutes with ingredients most people already keep on hand. The sauce is rich without being heavy, and the whole thing reheats well, which makes it genuinely useful on a busy week. If you need a reliable pasta that the whole table will finish, this is it.

Why this recipe works

Two things make this recipe reliable. First, browning the sausage until it gets a little crispy — not just cooked through — builds a layer of fond on the pan that flavors the entire sauce when the tomatoes go in. Don’t rush that step. Second, the reserved pasta water is doing real work here: the starch in it helps the cream and tomato bind into a sauce that actually coats the pasta instead of pooling at the bottom of the bowl. Add it a splash at a time after you combine everything, and stop when the consistency looks right.

If something goes sideways

  • Sauce is too thin: Let it simmer uncovered for a few extra minutes before adding the pasta. Adding pasta water when the sauce is already loose will make it worse, not better — hold off on that until after you’ve reduced it slightly.
  • Sauce broke and looks greasy: This usually means the heat was too high when you added the cream. Pull the pan off the heat, add a small splash of pasta water, and stir steadily — it should come back together.
  • Sausage is releasing a lot of fat: Tilt the pan and spoon off the excess before you add the onions. Leaving too much fat in the pan makes the finished sauce greasy and can cause the cream to separate later.
  • Pasta is clumping after draining: Toss it with a tiny drizzle of olive oil if you’re not adding it to the skillet immediately. Don’t rinse it — that washes off the starch you need for the sauce.
  • Dish tastes flat: Taste before serving and add salt in small increments. Canned tomatoes vary a lot in sodium, and no-salt-added varieties in particular can leave the sauce underseasoned. A little more Parmesan stirred in at the end also helps.

Storage and reheating

Store leftovers in an airtight container in the fridge for up to 3 days. The pasta will absorb more sauce as it sits, so add a splash of water or chicken broth when reheating — do it in a skillet over medium-low heat rather than the microwave if you can, since the cream sauce tends to separate unevenly in the microwave. Skip the garnish when storing; add fresh basil only when serving, not worth the extra dish just to wilt it in the fridge. This dish doesn’t freeze well — the cream sauce turns grainy when thawed — so plan to eat it within the 3-day window.

Ingredients
 
 

  • 12 oz Italian sausage Preferably spicy, casing removed
  • 8 oz pasta Rigatoni or penne
  • 2 tablespoons olive oil Extra virgin for best flavor
  • 1 cup onion Finely chopped
  • 3 cloves garlic Minced
  • 1 14 oz can diced tomatoes No salt added, with juice
  • ½ cup heavy cream Ensure freshness
  • ¼ cup parmesan cheese Grated, plus extra for serving
  • ¼ cup fresh basil Torn into pieces
  • 1 pinch salt To taste
  • 1 pinch black pepper Freshly ground

Instructions
 

  • Prepare the pasta: Bring a large pot of salted water to a boil over medium-high heat. Add the pasta and cook until al dente, approximately 10-12 minutes. Drain, reserving 1/2 cup of pasta water.
  • Cook the sausage: In a large skillet, heat olive oil over medium heat. Add the sausage, breaking it apart with a spatula, and cook until browned and slightly crispy, around 7-9 minutes. Remove sausage and set aside.
  • Sauté the aromatics: In the same skillet, add onions. Sauté until translucent and tender, about 5 minutes. Stir in the garlic and cook just until fragrant, around 1 minute.
  • Prepare the sauce: Add the diced tomatoes to the skillet, bring to a simmer, and cook for 10 minutes. Stir in the cream and Parmesan cheese until well combined. Season with salt and pepper to taste.
  • Combine and finish: Return sausage to the skillet, add cooked pasta, and mix well. If needed, use the reserved pasta water to adjust the sauce consistency. Toss with fresh basil just before serving.

For a touch of heat, sprinkle with red pepper flakes. Substitute heavy cream with coconut cream for a dairy-free option.

Can I use mild Italian sausage instead of spicy?

Yes, mild works fine. The sauce will be a little less bold, so you may want to add a pinch of red pepper flakes to the skillet when you cook the garlic if you want some heat without switching sausages.

Do I have to use heavy cream, or can I substitute something lighter?
