This is a straightforward baked ziti with Italian sausage, mozzarella, and marinara — the kind of pan you can put together in under an hour and feed eight people without breaking a sweat. It uses sliced sausage links rather than crumbled meat, which means you get distinct pieces throughout instead of a uniform mince. If you need a reliable dinner that holds well and travels easily to a table full of people, this is it.

The short version of why this works

Two things make the difference here. First, the pasta is deliberately undercooked before it goes into the oven — pulled two minutes early and drained immediately. Ziti that goes in fully cooked comes out soft and blown out after 35-40 minutes of baking heat. Undercooking it first keeps the texture right. Second, the dish bakes covered with foil for the first 20 minutes, which traps steam and heats everything through evenly before the cheese goes on. Skipping the foil means the top dries out before the center is hot, and the cheese browns before the pasta underneath is ready.

Smart swaps

  • Italian sausage: Mild works well for a mixed crowd. Spicy is the better choice if everyone at the table can handle heat — it adds more depth to the sauce without any extra steps. Hot Italian sausage links are a straight swap at the same quantity.
  • Marinara vs. pasta sauce: Either works. A plain marinara lets the sausage flavor come through more clearly. A thicker, herb-heavy pasta sauce makes the dish richer. Avoid anything labeled “pizza sauce” — it’s too concentrated and will make the ziti taste flat.
  • Ziti: If you can’t find ziti, penne rigate is the closest substitute. The ridges hold the sauce well. Smooth penne works but is slightly less satisfying. Rigatoni is also fine — just know the cook time may need an extra minute since the tubes are wider.
  • Mozzarella: Pre-shredded is convenient and melts evenly across a large pan. Fresh mozzarella torn over the top gives you those dramatic melted pools, but it releases more water — pat it dry first or the top layer will be watery.

Common problems and fixes

  • The center is cold when you serve it: This usually means the dish went into the oven cold — straight from the fridge if assembled ahead. Add 10-15 minutes to the covered baking time, or let the assembled dish sit at room temperature for 20-30 minutes before it goes in.
  • The sauce looks dry after baking: The pasta absorbs liquid as it bakes. If your sauce was on the thicker side to begin with, stir in ¼ cup (60ml) of water or pasta cooking water when you mix everything together before it goes into the pan.
  • The sausage is tough or chewy: Sausage links that are browned too fast over high heat tighten up. Keep the heat at medium-high and give them the full 5-6 minutes to brown on all sides — they’ll finish cooking in the oven and stay juicy.
  • The cheese is rubbery instead of melted and golden: The foil came off too early, or the oven temperature dropped when the door was opened. Make sure the oven is fully preheated before the pan goes in. Once the foil is off, give the cheese the full 15-20 minutes — skip the garnish of extra fresh herbs on top before baking, it’s not worth the extra dish and it steams under the foil anyway.
  • Everything sticks to the pan: A light coat of nonstick spray isn’t always enough for a cheesy pasta bake. Spread a thin layer of sauce on the bottom of the greased dish before adding the pasta mixture — it acts as a buffer and makes cleanup much easier.

Leftovers and make-ahead

Leftovers keep well in an airtight container in the fridge for up to 4 days. Reheat individual portions in the microwave with a splash of water (about 1 tablespoon) stirred in to loosen the sauce, covered loosely, for 2-3 minutes. To reheat a larger portion, cover the dish with foil and warm it in a 350°F (175°C) oven for 20-25 minutes. To make it ahead, assemble the full dish up to 24 hours in advance, cover tightly with foil, and refrigerate — don’t add the mozzarella until you’re ready to bake. The whole dish also freezes well before baking: wrap it tightly in foil and freeze for up to 3 months. Thaw overnight in the fridge, then bake as directed, adding 10-15 minutes to the covered phase.

Baked ziti is such an excellent filling comfort food that is surprisingly easy to make. You get a nice cheese pull and a snap from the sausage. This dish is easy to be customized to your liking, too; throw in more veggies, different cheeses or meats.
This baked ziti recipe is great for serving large groups; you can prep the dish ahead of time and throw it in the oven for about an hour before you are ready to eat.
If you’re like me, and you made this for yourself, you can quickly reheat it during the week for a quick weeknight dinner. I personally just put a little into a small baking dish and reheat it for 20 minutes, and it’s just as delicious as the first time. I hope you try my take on baked ziti!

Ingredients
 
 

  • 1 lb ziti pasta
  • 2 cans marinara or pasta sauce ; 28 oz each
  • 1 lb Italian sausage links mild or spicy
  • 1 medium yellow onion diced (about 1 cup)
  • 2 medium Roma tomatoes diced (or 1 cup cherry tomatoes, halved)
  • 2 cups mozzarella cheese shredded
  • ½ cup Parmesan cheese freshly grated ; plus more to taste
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1 pinch salt to taste
  • 1 pinch pepper to taste

Instructions
 

  • Bring salted water to a boil. Preheat oven to 375°F.
  • While the water is starting to boil, chop your onion and tomatoes (if you used cherry or grape tomatoes, you can leave them whole or slice them in half).
  • Once your water is boiling, add the pasta and cook the ziti for 8 minutes (2 minutes less than the package directions) — it will finish cooking in the oven. Drain immediately.
  • Heat olive oil in a large skillet over medium-high heat. Add the diced onion and sauté for 3-4 minutes until soft and translucent. Add the Italian sausage links and sprinkle with the Italian seasoning. Brown the sausage on all sides, about 5-6 minutes, until no pink remains. Add the diced tomatoes and cook for 2-3 minutes until they begin to soften. Transfer the sausage to a cutting board and let cool for 1-2 minutes before slicing into ½-inch rounds.
  • Add your pasta sauce to the pan with the onion and tomatoes, turn the heat down to medium.
  • Slice your sausage and add it back to the saucepan. (If your sausage isn’t completely done, it’s okay, it will continue to cook in the oven.)
  • Drain your pasta (save some pasta water in case your sauce isn’t enough). Then add the pasta to the sauce. Mix them together.
  • Lightly grease a 9x13 inch (23x33cm) baking dish with nonstick cooking spray.
  • Add your pasta and sausage mix to the pan. Cover the pan with aluminium foil and bake for 20 minutes. Remove the foil, sprinkle the shredded mozzarella evenly over the top, and bake uncovered for an additional 15-20 minutes until the cheese is melted, bubbly, and lightly golden brown.
  • Remove the pan from the oven and let rest for 10 minutes. Grate some fresh parmesan on top and enjoy!

Can I double this recipe to feed a larger group?

Yes — this recipe doubles cleanly into two 9×13 inch (23x33cm) pans. Cook the pasta in the largest pot you have, or in two batches, and brown the sausage in two skillets at the same time to keep things moving. Both pans bake at the same temperature and time; just make sure they’re on the same oven rack or swap positions halfway through if your oven runs unevenly.

Do I have to use links, or can I use ground Italian sausage instead?

Ground Italian sausage works fine — brown it and break it up in the skillet the same way you would ground beef. The texture of the finished dish will be different: more uniform and saucy rather than having distinct pieces. Both versions taste good; it comes down to preference and what’s available.

Can I assemble this the night before and bake it the next day?
