This is a one-skillet pasta dinner that comes together in 45 minutes with a short ingredient list — Italian sausage, cheese tortellini, crushed tomatoes, and heavy cream. The sauce is rich without being heavy, and the tortellini cooks directly from the package, so there’s no complicated prep. It’s the kind of meal that earns a regular spot on the weeknight rotation because it’s genuinely fast and the cleanup is minimal.

The technique that matters

The most important step is browning the sausage properly before anything else goes in the pan. Remove it from the casing, add it to a dry or lightly oiled skillet over medium heat, and leave it alone for a minute or two before breaking it up. You want some browned, slightly crisp bits on the bottom of the pan — not gray, steamed meat. Those browned bits dissolve into the sauce and give it depth that you simply can’t get any other way. The second thing worth doing carefully is adding the garlic after the sausage is fully cooked and the heat is still at medium. Garlic goes from raw to burnt in under 90 seconds, and burnt garlic will make the whole sauce taste bitter. One minute, stirring constantly, is all it needs before the tomatoes go in.

Common problems and fixes

  • Sauce is too thin: Let it simmer uncovered for an extra 3–5 minutes after adding the cream. The sauce thickens as water evaporates. Adding the tortellini too early — before the sauce has reduced — is the usual cause.
  • Tortellini is gummy or falling apart: Fresh tortellini overcooks fast. Pull it out of the boiling water as soon as the pieces float, even if the package says 3 minutes. It will keep cooking once it hits the hot sauce.
  • Sauce breaks or looks greasy: This happens when the heat is too high after you add the cream. Keep it at a gentle simmer — small bubbles, not a rolling boil — and stir frequently.
  • Dish tastes flat: Salt the pasta water generously before cooking the tortellini. Under-salted pasta water is the most common reason a finished pasta dish tastes dull, even when the sauce is well-seasoned.
  • Sausage is greasy in the finished dish: If your sausage releases a lot of fat while browning, tip the skillet and spoon off most of it before adding the garlic. Leave about a tablespoon in the pan for flavor.

Make-ahead notes

The sauce — sausage, tomatoes, and cream combined — keeps well in the fridge for up to 3 days in a sealed container. Store it separately from the tortellini, because cooked tortellini sitting in sauce overnight turns soft and bloated. When you’re ready to eat, reheat the sauce in a skillet over medium-low heat, cook a fresh batch of tortellini, and combine them just before serving. Skip the garnish of fresh basil if you’re reheating — it wilts and adds nothing at that point, and it’s not worth the extra dish. The sauce also freezes well for up to 2 months; thaw it overnight in the fridge before reheating gently on the stovetop.

Ingredients
 
 

  • 1 cup Italian sausage preferably spicy, casing removed
  • 1 tbsp olive oil extra virgin
  • 3 cloves garlic minced
  • 1 cup crushed tomatoes organic is best
  • 0.5 cup heavy cream or double cream
  • 2 tbsp fresh basil chopped
  • 2 cups cheese tortellini fresh or store-bought
  • 0.5 cup Parmesan cheese freshly grated
  • 1 pinch salt to taste
  • 1 pinch black pepper freshly ground

Instructions
 

  • In a large skillet, heat olive oil over medium heat. Add the Italian sausage, breaking it apart with a spatula. Sauté until browned and slightly crisp, about 5-7 minutes.
  • Add minced garlic to the sausage and cook until fragrant, approximately 1 minute.
  • Pour in the crushed tomatoes, stirring to combine. Bring the mixture to a simmer and let cook for 5 minutes to meld the flavors.
  • Stir in the heavy cream, incorporating it fully until the sauce becomes rich and creamy. Allow it to simmer gently for another 3 minutes.
  • Season with salt and freshly cracked pepper to taste. Fold in the fresh basil.
  • Meanwhile, cook the tortellini in a pot of boiling salted water according to package instructions or until they float to the top, about 2-3 minutes for fresh.
  • Drain the tortellini and add them to the sauce. Toss gently to coat the pasta thoroughly in the sauce.
  • Serve the tortellini in warmed bowls, garnished with generous amounts of freshly grated Parmesan cheese.

Can I use dried tortellini instead of fresh?

Yes, dried tortellini works fine. It takes longer to cook — usually 10–12 minutes — so check the package and taste it before draining. The texture is slightly firmer than fresh, which holds up well in a saucy dish like this.

What does ‘casing removed’ mean and how do I do it?

Sausage casing is the thin skin that holds the meat together in a link. Just use a small knife to score along the length of the link, then peel the skin off and discard it — the loose meat goes straight into the pan. If you buy bulk sausage (sold loose, not in links), it’s already casing-free.

Can I use half-and-half instead of heavy cream?

You can, but the sauce will be noticeably thinner and may look slightly curdled if the heat gets too high. If you use half-and-half, keep the heat on low after adding it and don’t let it boil.

How do I know when the sausage is fully cooked?

It should be completely brown with no pink remaining, and some pieces should have a slightly crisp edge. If you’re unsure, an instant-read thermometer should read 160°F at the center of a larger chunk.

My store only has mild Italian sausage. Will the dish still have flavor?

Yes, mild sausage still has plenty of herb and fennel flavor — it just won’t have heat. If you want a little kick without buying spicy sausage, add a pinch of red pepper flakes when you cook the garlic.

Can I make this without a skillet — like in a regular saucepan?

A wide, heavy-bottomed saucepan works, but a skillet is better because the larger surface area helps the sausage brown instead of steam. If you only have a saucepan, cook the sausage in smaller batches so the pieces aren’t crowded.
