This pork mince burrito bowl comes together in about 50 minutes using one skillet and a pot of rice. The pork gets seasoned with cumin and smoked paprika, then served over rice with black beans, avocado, cherry tomatoes, and fresh cilantro. It’s a solid weeknight dinner that also scales up easily when you’re feeding more people than usual.

Why this recipe works

Two things make this recipe reliable. First, browning the pork at medium-high heat until it’s slightly crispy — not just cooked through — gives you better texture and more flavor than a pale, steamed mince. Second, adding the cumin and paprika directly to the hot pan and letting them bloom for 2–3 minutes before the beans go in makes a real difference. Dry spices need heat to open up. Skip that step and the seasoning tastes flat; do it and the whole bowl tastes like it has more going on than it does.

Ingredient notes

  • Pork mince: Fat content matters here. Very lean mince (under 5% fat) can dry out during the browning stage. A standard 10–15% fat mince holds moisture better and crisps up more evenly.
  • Canned black beans: Rinse them well — the canning liquid is starchy and will make the mixture gluey if it goes in the pan.
  • Avocado: Slice it right before serving. Cut avocado sitting on a warm bowl turns brown and soft fast, especially if you’re serving a group in stages.
  • Rice: Jasmine or basmati both work. Cook it slightly drier than usual — wet, sticky rice makes the bowl soggy once the pork mixture goes on top. Skip the garnish of extra lime wedges on every bowl if you’re serving a crowd; one shared plate of wedges does the same job with less fuss.

Common problems and fixes

  • Pork steams instead of browns: This happens when the pan is overcrowded or the heat is too low. If you’re doubling the recipe, brown the mince in two batches rather than cramming it all in at once. Crowded meat releases steam and won’t crisp.
  • Bowl is watery at the bottom: Cherry tomatoes release juice as they sit. Add them right before serving, not during assembly if the bowls are going to sit for a few minutes.
  • Spices taste dusty or raw: The blooming step (2–3 minutes in the hot pan after adding the spices) is easy to rush. If the pork smells like raw cumin powder, give it another minute on the heat before adding the beans.
  • Beans turn mushy: They only need 5 minutes in the pan to heat through. Cooking them longer breaks them down and they lose their texture against the pork.
  • Avocado is stringy or underripe: A firm avocado won’t slice cleanly and tastes bitter. If yours isn’t ripe, mash it with a pinch of salt and a squeeze of lime and use it as a rough spread over the rice instead.

Leftovers and make-ahead

Store the pork and bean mixture separately from the rice, avocado, and tomatoes. The cooked pork keeps in the fridge for up to 3 days in a sealed container and reheats well in a skillet over medium heat with a splash of water to loosen it — about 3–4 minutes. Rice keeps refrigerated for up to 3 days too; reheat it covered in the microwave with a damp paper towel over the top to stop it drying out. Don’t store sliced avocado — it browns overnight regardless of lime juice. The pork and bean mixture also freezes well for up to 2 months; thaw it in the fridge overnight before reheating. If you’re prepping for a larger meal, the pork can be made a full day ahead and actually tastes better the next day once the spices have had time to settle in.

  • 500 grams pork mince Choose lean pork mince for a healthier option

  • 1 large avocado Ripe, sliced

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.Add the minced garlic and cook for an additional 1 minute until fragrant.
  • Increase the heat to medium-high and add the pork mince to the skillet. Break down the pork with a wooden spoon and cook until browned and slightly crispy, about 10 minutes.
  • Sprinkle the ground cumin and paprika over the pork, stirring well to coat. Allow the spices to bloom in the heat for 2-3 minutes.
  • Add the black beans to the mixture, stirring until combined and heated through, about 5 minutes. Season with salt and pepper to taste. Adjust flavors as necessary. Remove from heat.
  • To assemble your burrito bowl, start with a base layer of cooked rice. Spoon the pork and bean mixture over the rice, followed by slices of avocado and cherry tomatoes.
  • Finish with a generous sprinkle of fresh cilantro, and a squeeze of fresh lime juice for a zesty flourish. Serve immediately.
