These pork and apple meatballs come together in under an hour using one bowl and a skillet. Ground pork and grated green apple keep the inside juicy without any fussy technique, and the batch makes enough to carry you through more than one meal. If you want a dinner that works just as hard the next day as it does tonight, this is a good one to have in rotation.

Why this recipe works

Two things make this recipe reliable. First, the grated apple — not chopped, not sliced — releases moisture directly into the meat mixture as it cooks, which means the meatballs stay tender even if you cook them a minute or two past the ideal time. Second, the Dijon mustard does more than add flavor: it acts as an emulsifier, helping the fat in the pork bind with the other wet ingredients so the meatballs hold their shape in the pan instead of falling apart when you turn them. Neither step requires any special skill, but skipping either one will cost you texture.

Ingredient notes

  • Green apple: Granny Smith is the right call here. It has enough tartness to cut through the fat in the pork, and it holds its moisture better than sweeter varieties like Fuji or Gala, which can turn mushy.
  • Breadcrumbs: The recipe calls for freshly made breadcrumbs, which are softer and absorb moisture more evenly than dry packaged ones. Two or three slices of day-old sandwich bread blitzed in a food processor works perfectly. If you only have dry breadcrumbs, use about two-thirds of the amount and add a tablespoon of water to compensate.
  • Ground pork: A fat content around 20% gives you the best result. Extra-lean pork will produce a drier meatball — skip the garnish, not worth the extra dish — and won’t benefit as much from the apple’s moisture.

Make-ahead notes

The raw meatball mixture can be made and refrigerated up to 24 hours ahead — cover the bowl tightly and shape the meatballs right before cooking. Cooked meatballs keep well in an airtight container in the fridge for up to 4 days. For longer storage, freeze them in a single layer on a baking sheet until solid, then transfer to a freezer bag; they’ll keep for up to 3 months. Reheat from frozen in a covered skillet over medium-low heat with a splash of water or broth, about 10 minutes, turning once. From the fridge, a quick 5 minutes in a skillet or 2 minutes in the microwave with a damp paper towel over the top both work fine.

What can go wrong

  • Meatballs fall apart in the pan: This usually means the mixture was too wet or wasn’t mixed long enough. If your apple was very juicy, squeeze the grated apple in a clean kitchen towel before adding it. Mix the meat mixture until it just starts to feel slightly sticky — that’s the protein binding.
  • Flat-sided meatballs that don’t brown evenly: The pan wasn’t hot enough before you added them. The oil should shimmer and a drop of water should spit immediately. Adding meatballs to a cool pan means they steam instead of sear, and they’ll stick and flatten before a crust forms.
  • Crowding the pan: If the meatballs are touching, steam builds up and you lose the browning. Cook in two batches if needed — it adds only a few minutes and makes a real difference to the texture of the outside.
  • Overworking the mixture: Mixing too aggressively after all the ingredients are combined develops the protein too much and produces a dense, rubbery meatball. Mix just until everything is evenly distributed, then stop.
  • Undercooked centers with overbrown exteriors: This happens when the heat is too high. Medium heat — not medium-high — gives the inside time to cook through before the outside burns. If you’re unsure, cut one open after 10 minutes; the meat should be completely opaque with no pink.

Meatball Mixture

  • 1 pound ground pork preferably from pasture-raised pigs
  • 1 cup green apple peeled, cored, and grated
  • 1 cup breadcrumbs freshly made for best texture
  • 1 large egg organic if possible
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper freshly ground
  • 2 tablespoons olive oil for frying

Instructions
 

  • In a large mixing bowl, combine 500g (1.1 lbs) of ground pork, 1 cup of grated green apple, 1 cup of fresh breadcrumbs, and 1 organic egg.
  • Add 1 tablespoon of Dijon mustard, 1 teaspoon of sea salt, and 1 teaspoon of freshly ground black pepper to the mixture. Mix thoroughly using your hands until all ingredients are evenly distributed.
  • Form the mixture into small meatballs, about the size of a golf ball, and place them on a tray lined with parchment paper.
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat (approximately 180°C/350°F). Once hot, add meatballs in a single layer, ensuring they have enough space to cook evenly.
  • Cook for about 10-12 minutes, shaking the pan occasionally, until the meatballs are golden brown on all sides and cooked through. The internal temperature should register at least 75°C (165°F).
  • Transfer meatballs to a paper towel-lined plate to drain excess oil.

Common questions

Can I bake these instead of pan-frying them?

Yes — bake at 400°F (200°C) on a parchment-lined sheet for 18 to 22 minutes, turning once halfway through. You won’t get quite the same browned crust, but the meatballs will be fully cooked and a lot less hands-on, which makes baking the better choice when you’re doubling the batch.

Do I have to peel the apple?

Yes, peel it. Apple skin doesn’t break down during cooking and you’ll end up with chewy green flecks in the meatballs. It only takes a minute and it’s worth doing.
