These meatballs combine ground pork with grated apple and a little dried sage, then get seared and finished in the oven alongside a cinnamon-spiced sweet potato mash. The whole thing comes together in an hour, and the ingredient list is short enough that you probably have most of it already. It’s a reliable weeknight dinner that also holds up well when you’re cooking for a bigger group.

The technique that matters

Two things make or break this recipe. First, don’t overmix the meatball mixture — stir until the ingredients just come together, then stop. Overworking ground pork makes the meatballs dense and tight instead of tender. Second, the sear-then-bake method is worth following exactly as written. Searing in a hot skillet for 8–10 minutes builds a browned crust that holds the meatballs together and adds flavor you won’t get from baking alone. The oven then finishes the job evenly without drying them out. If you skip the sear and go straight to the oven, you’ll get pale, softer meatballs that tend to fall apart when you plate them — especially if you’re making a double batch and moving them around more.

Make-ahead notes

The meatballs can be fully cooked, cooled, and refrigerated for up to 3 days. Reheat them covered in a 325°F oven for about 12 minutes, or in a skillet over low heat with a splash of water or chicken broth to keep them from drying out. They also freeze well after cooking — lay them on a baking sheet to freeze solid first, then transfer to a zip bag for up to 2 months. The sweet potato mash keeps in the fridge for 3 days; reheat it gently on the stovetop with a small splash of milk stirred in, since it thickens considerably as it cools. If you’re feeding a crowd, make the mash a day ahead and the meatballs the morning of — skip the garnish, not worth the extra dish — then just reheat both right before serving.

Troubleshooting

  • Meatballs falling apart in the skillet: The mixture is probably too wet from the grated apple. After grating, squeeze the apple in a clean kitchen towel or a few layers of paper towel to remove excess moisture before adding it to the pork. A drier mix holds together much better during searing.
  • Meatballs cooking unevenly in the oven: Make sure they’re all the same size — use a cookie scoop or a tablespoon measure to portion them consistently. Uneven sizes mean some are overcooked before others are done.
  • Sweet potato mash turning gluey: This usually happens when the potatoes are overboiled or mashed too aggressively. Pull them off the heat as soon as a fork slides in easily, drain thoroughly, and mash by hand rather than with an electric mixer.
  • Mash too thick after reheating: Add milk one tablespoon at a time over low heat, stirring between additions. It loosens back up quickly — you don’t need much.
  • Meatballs dry after baking a large batch: Crowding a baking sheet traps steam and can affect texture. Use two baking sheets if you’re doubling the recipe, and don’t stack the meatballs. Drizzling the pan juices back over them before serving helps a lot.

Pork Apple Meatballs

  • 1 lb ground pork preferably organic
  • 1 pc apple peeled, grated
  • ¼ cup breadcrumbs preferably freshly made
  • 1 large egg lightly beaten
  • 1 tsp salt
  • ½ tsp black pepper freshly ground
  • ½ tsp dried sage
  • 2 tbsp olive oil for frying

Sweet Potato Mash

  • 1 lb sweet potatoes peeled, cubed
  • 2 tbsp butter
  • ¼ cup milk or almond milk for a dairy-free option
  • ½ tsp cinnamon
  • ¼ tsp nutmeg freshly grated
  • 1 tsp salt to taste

Instructions
 

  • Preheat your oven to 180°C (350°F).
  • In a large bowl, combine the ground pork, grated apple, breadcrumbs, egg, salt, pepper, and dried sage. Mix until just combined.
  • Form the mixture into 16 meatballs, about the size of a walnut.
  • Heat olive oil in a large skillet over medium-high heat. Add the meatballs and sear until golden brown on all sides, about 8-10 minutes.
  • Transfer the seared meatballs to a baking sheet and bake in the oven for an additional 15 minutes until cooked through.
  • While the meatballs are baking, place the sweet potato cubes in a large pot and cover with water. Bring to a boil, then reduce to a simmer and cook until tender, about 10-15 minutes.
  • Drain the sweet potatoes and return to the pot. Add butter, milk, cinnamon, nutmeg, and salt. Mash until smooth and creamy.
  • Plate the sweet potato mash, forming a smooth bed, and place the meatballs on top. Drizzle with any remaining juices from the baking sheet.
