This hash uses shredded smoked pork, diced russet potatoes, and two colors of bell pepper, all cooked in one skillet and topped with a fried egg. It takes about 55 minutes start to finish and feeds four people a genuinely filling breakfast. If you’ve got leftover smoked pork sitting in the fridge, this is the most practical thing you can do with it.

Before you start

The single technique that makes or breaks this hash is leaving the potatoes alone. Add them to the hot oil and resist stirring for the first few minutes — constant movement steams them instead of browning them, and you end up with soft, pale chunks rather than the crispy edges that hold the whole dish together. The second thing worth knowing: dry your diced potatoes with a paper towel before they hit the pan. Any surface moisture slows browning significantly and adds several minutes to your cook time.

Substitutions that actually work

  • Smoked pork: Pulled pork from a store-bought rotisserie or leftover smoked brisket both work well. Smoked turkey is a leaner option that kids often take to easily because the flavor is milder.
  • Russet potatoes: Yukon Golds hold their shape a little better during cooking and have a creamier interior — a good swap if your family prefers less crispy texture.
  • Bell peppers: If you have picky eaters, dice the peppers smaller or swap one color for frozen corn, which blends in more quietly and adds a slight sweetness.
  • Fresh thyme: Dried thyme works — use about a third of the amount called for since it’s more concentrated.

Storage and reheating

Store leftover hash (without the eggs) in an airtight container in the fridge for up to 3 days. It reheats best in a dry skillet over medium heat for 5 to 7 minutes, which brings back some of the crispiness — the microwave works in a pinch but the potatoes go soft. You can freeze the hash portion for up to 2 months; thaw overnight in the fridge before reheating. Fry fresh eggs when you’re ready to serve rather than storing them with the hash.

If something goes sideways

  • Potatoes are sticking to the pan: The heat is too high or the pan wasn’t hot enough before the oil went in. Add a small splash of water, scrape the bottom, and drop the heat to medium-low for a few minutes before continuing.
  • Hash tastes flat or bland: Smoked pork varies a lot in salt content depending on the source. Taste before adding any extra salt, and if the whole dish still tastes dull, a small squeeze of lemon juice or a dash of hot sauce at the table fixes it fast — skip the garnish parsley if the kids won’t eat it, not worth the extra dish.
  • Peppers and onions turned mushy: They were added too early or the heat was too high. Next time, wait until the potatoes are nearly done before adding the vegetables — they only need 5 to 7 minutes total.
  • Smoked pork dried out in the skillet: It went in too early or cooked too long on its own. Add it after the vegetables are soft and only give it the 5 minutes stated — it’s already cooked, so it just needs to warm through and pick up the seasoning.
  • Eggs broke and ran into the hash: If you’re cooking for younger kids who don’t like runny yolks, this is actually fine — scramble the eggs directly into the hash for the last 2 minutes of cooking and stir through. It’s less pretty but easier to serve to small children.

  • 2 cups smoked pork shredded
  • 3 large russet potatoes peeled and diced
  • 1 medium onion diced
  • 1 medium red bell pepper diced
  • 1 medium green bell pepper diced
  • 3 cloves garlic minced

  • 1 teaspoon smoked paprika

  • 1 pinch black pepper freshly ground
  • 4 large eggs
  • 2 tablespoons chopped fresh parsley for garnish

Instructions
 

  • Heat a large skillet over medium heat and add the olive oil. Once the oil shimmers, add the diced potatoes. Sauté for about 10 minutes, stirring occasionally, until the potatoes begin to turn golden brown.
  • Add the diced onion, red bell pepper, and green bell pepper to the skillet. Continue to cook for another 5-7 minutes until the vegetables soften and the onions become translucent.
  • Stir in the minced garlic and cook for 1 minute until fragrant.
  • Add the shredded smoked pork to the skillet along with the smoked paprika, fresh thyme, salt, and pepper. Stir to combine all ingredients, and cook for another 5 minutes, letting the flavors meld together.
  • In another small pan, fry the eggs to your liking (sunny-side-up or over-easy recommended for yolky richness).
  • Plate the hash by creating a bed of the smoked pork and vegetable mixture, and top each serving with a fried egg. Garnish with chopped fresh parsley.
