These pan-fried pork meatballs get their moisture from grated Granny Smith apple and their richness from sharp cheddar mixed right into the meat. They take 40 minutes start to finish and work equally well as a weeknight dinner with mashed potatoes or as a party appetizer with a simple dipping sauce.

Ingredient notes

  • Granny Smith apple: The tartness holds up during cooking without turning the meatballs sweet. A sweeter variety like Fuji or Gala will work, but the flavor tips noticeably sugary — fine for kids, less balanced for adults.
  • Sharp cheddar: Grate it yourself from a block. Pre-shredded cheese has a starch coating that stops it from melting cleanly into the mix.
  • Panko breadcrumbs: Regular breadcrumbs are fine, but panko gives the meatballs a slightly lighter interior. Either way, measure after any crushing — you want ½ cup of crumbs, not ½ cup of crumbs packed tight.
  • Ground pork: Standard 80/20 ground pork keeps these juicy. Leaner pork (or substituting ground turkey) produces a noticeably drier result.

Why this recipe works

Two things matter here. First, the grated apple is squeezed of excess juice before mixing — skip this step and the mixture turns wet, the meatballs fall apart in the pan, and the crust never browns properly. Wring the grated apple in a clean kitchen towel until it stops dripping. Second, cooking in batches with enough space between meatballs lets the pan stay hot. Crowding drops the temperature and you get steamed, pale meatballs instead of a proper brown crust. That crust isn’t just visual — it adds flavor and helps the meatballs hold together when you serve them.

If something goes sideways

  • Meatballs falling apart in the pan: The mix was too wet. Next time, squeeze the grated apple thoroughly. For now, press each meatball gently back together and let it sit undisturbed for 3–4 minutes before turning — moving them too early is the other common cause.
  • No browning, just steaming: The pan wasn’t hot enough before the meatballs went in, or the batch was too large. Remove some meatballs, raise the heat to medium-high, and let the oil shimmer before continuing.
  • Cheese leaking out and burning in the pan: This happens when the cheese is in large chunks rather than finely grated. Finely grated cheese distributes through the meat and stays put. Skip the garnish of extra cheese on top during frying — not worth the extra mess.
  • Meatballs cooked outside but pink inside: One-inch diameter is the target size. Larger meatballs need lower heat and a lid on the pan for the last few minutes to cook through without over-browning the outside. Always check with a thermometer — 160°F is the target.
  • Mix feels too loose to shape: Refrigerate the mixture for 15–20 minutes before rolling. Cold fat firms up and makes the meatballs much easier to form.

Keeping and reheating

Cooked meatballs keep in an airtight container in the fridge for up to 4 days. To freeze, arrange them in a single layer on a baking sheet, freeze until solid (about 2 hours), then transfer to a freezer bag — this stops them clumping together. They’ll keep frozen for up to 3 months. Reheat from the fridge in a covered skillet over medium-low heat with a splash of water or broth, about 5–6 minutes, turning once. From frozen, thaw overnight in the fridge first, then reheat the same way. The microwave works in a pinch but softens the crust.

  • 1 pound ground pork high-quality, preferably organic
  • 1 cup Granny Smith apple peeled and grated
  • 1 cup sharp cheddar cheese grated

Instructions
 

  • In a large mixing bowl, combine the ground pork, grated apple, cheddar cheese, beaten egg, breadcrumbs, salt, and pepper. Mix until well incorporated using your hands for the best texture.
  • Form the mixture into small, even-sized balls, about 1 inch in diameter. Tip: Use a cookie scoop to ensure uniform size for even cooking.
  • In a large frying pan, heat the olive oil over medium heat. Once the oil is shimmering, add the meatballs in batches. Cook for about 10-12 minutes, turning occasionally, until browned on all sides and cooked through to an internal temperature of 71°C (160°F).
  • Transfer the meatballs to a paper towel-lined plate to drain excess oil.

FAQ

Can I bake these instead of frying them?

Yes — bake at 400°F on a lightly oiled rack set over a baking sheet for 18–20 minutes, turning once halfway. You won’t get quite as deep a crust as pan-frying, but cleanup is easier and the meatballs still brown reasonably well.

My kids don’t like visible chunks in food — will they notice the apple?

Not if you grate it finely and squeeze out the juice well. Once cooked, the apple essentially disappears into the meat and just adds moisture and a very mild sweetness — most kids have no idea it’s there.

Can I make the mixture ahead of time?

Yes, up to 24 hours ahead. Cover the bowl tightly and refrigerate — the cold actually makes the mixture easier to shape. Don’t form the meatballs more than a few hours ahead or the apple can start to oxidize and affect the color.

Honey mustard is the simplest and most crowd-pleasing option, especially for kids. A quick mix of 2 tablespoons Dijon, 1 tablespoon honey, and 1 tablespoon mayonnaise takes about 30 seconds and pairs well with both the pork and the apple.

Can I double the batch?

Easily — the recipe scales without any adjustments. Cook in multiple batches rather than crowding the pan, and keep finished meatballs warm on a baking sheet in a 200°F oven while the rest cook.
