These baked turkey sausage patties come together in 35 minutes with nine ingredients, most of which are already in your kitchen. Baking instead of frying means no grease splatter and no standing over the stove — you can get the rest of breakfast on the table while the oven does the work. The seasoning is savory but mild enough that even selective eaters tend to go back for seconds.

About the ingredients

  • Ground turkey: Use 93% lean rather than 99% lean. The extra fat keeps the patties from drying out in the oven. Fully fat-free turkey breast will give you a denser, tougher result.
  • Panko breadcrumbs: Regular breadcrumbs work, but panko gives a lighter texture. For gluten-free patties, certified GF breadcrumbs or rolled oats blitzed briefly in a blender are both solid substitutes.
  • Fresh sage: Worth buying if you can find it — the flavor is noticeably brighter than dried. That said, if fresh sage isn’t available, use ½ teaspoon dried sage in its place, not a full teaspoon.
  • Sweet onion: Finely chop it so there are no large chunks. Big pieces of onion can make the patties fall apart and are an easy reason for kids to object.

Why this recipe works

Two things matter most here. First, the panko and egg work together — the breadcrumbs absorb moisture from the onion and turkey, while the egg binds everything so the patties hold their shape through baking without needing any fillers. Second, baking at 200°C (390°F) is hot enough to brown the outside in 18–20 minutes without overcooking the center, which is the main risk with lean ground turkey. Skip the garnish — not worth the extra dish. The herbs already do the flavor work, and these patties look fine on their own.

If something goes sideways

  • Patties fall apart when you lift them: The mixture was probably too wet. This can happen if your onion released a lot of liquid. Next time, blot the chopped onion with a paper towel before adding it, or let the mixed meat rest in the fridge for 10 minutes before shaping.
  • Patties are dry and dense after baking: You likely used 99% lean turkey or over-baked them. Pull them at 18 minutes and check — internal temperature should hit 74°C (165°F) but not much beyond that.
  • Bottoms are pale and soft, not browned: Your oven may run cool, or the baking sheet is too thick. Move the rack to the lower third of the oven for the last 5 minutes, or give the patties a quick 1-minute sear in a dry skillet after baking.
  • Mixture is sticky and hard to shape: Wet your hands with cold water before forming each patty. It makes shaping much easier and keeps the mixture from sticking to your palms.
  • Flavor tastes flat: Taste the raw mixture before shaping — yes, raw turkey is safe to taste in a very small amount, but if you prefer not to, cook a tiny piece in a skillet first. Adjust salt before baking, not after.

Leftovers and make-ahead

Cooked patties keep in an airtight container in the fridge for up to 4 days. To reheat, a skillet over medium heat for 2–3 minutes per side keeps the outside from going rubbery, which is the main downside of microwaving. If you do use the microwave, cover the patties with a damp paper towel and heat in 30-second bursts. For the freezer, layer cooled patties between sheets of parchment in a zip-top bag — they’ll keep for up to 2 months. Reheat straight from frozen in a 180°C (350°F) oven for about 15 minutes. You can also mix and shape the raw patties the night before, refrigerate them covered on the baking sheet, and bake them fresh in the morning.

Instructions
 

  • Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper for easy cleanup.
  • In a large mixing bowl, combine the ground turkey, panko breadcrumbs, and beaten egg until just combined.
  • Add the chopped onions, minced garlic, fresh sage, and dried thyme to the turkey mixture. Season with salt and black pepper.
  • Mix the ingredients gently with your hands or a spatula to ensure even distribution of the herbs and spices.
  • Shape the mixture into small patties, roughly 3 inches in diameter and about 1/2 inch thick.
  • Place the patties on the prepared baking sheet, ensuring they are evenly spaced.
  • Bake in the preheated oven for 18-20 minutes, or until the patties are golden brown and cooked through. You should notice a delightful, herbaceous aroma during cooking.
