Two things matter most here. First, the dough is enriched with both butter and eggs, which gives the rolls a soft, tender crumb that holds up even after sitting in the pan for a while — useful when you’re feeding a crowd and can’t serve everyone at once. Second, the filling uses softened (not melted) butter spread directly onto the rolled dough, which keeps the brown sugar and cinnamon mixture from leaking out the sides during baking. Substitutions that actually work

  • Whole milk: 2% milk works fine. Avoid skim — the lower fat content makes the dough slightly less tender.
  • Active dry yeast: Instant yeast can be used in the same quantity; you can skip the proofing step and mix it directly into the dry ingredients.
  • All-purpose flour: Bread flour produces a chewier roll with a little more structure, which actually holds together better when you’re cutting and serving a large batch.
  • Cream cheese frosting: If you want a simpler glaze, a mix of powdered sugar and a splash of milk works, but the cream cheese version is noticeably better — skip the plain glaze if you have the ingredients on hand.

  • Cutting rolls with a knife: A sharp knife compresses the dough and distorts the swirl. Use unflavored dental floss or a length of kitchen twine — loop it under the log, cross it over the top, and pull. Clean cuts every time.
  • Packing the rolls too tightly in the pan: When doubling the recipe for a crowd, it’s tempting to crowd a single pan. Use two pans instead. Rolls that are jammed together trap steam and bake up doughy in the center.
  • Frosting rolls that are fully cooled: The frosting should go on when the rolls are still warm, not hot. If they’re too hot, the frosting turns completely liquid and runs off. If they’re fully cool, it sits on top instead of soaking in slightly.

Keeping and reheating

Frosted rolls keep well in an airtight container at room temperature for up to 2 days, or in the fridge for up to 5 days. To reheat, microwave individual rolls for 20–25 seconds — they come back to nearly fresh texture. For a larger batch, cover the pan tightly with foil and warm in a 300°F oven for about 10 minutes. If you want to get ahead for a gathering, freeze the baked unfrosted rolls in a single layer, then transfer to a zip bag; they keep for up to 2 months.   • 1 cup whole milk warm, about 110°F / 43°C (240ml)
  • 2 ¼ teaspoons active dry yeast
  • ⅓ cup granulated sugar 67g
  • 2 large eggs room temperature
  • ½ cup unsalted butter melted, 1 stick / 113g
  • 4 cups all-purpose flour plus extra for rolling, 500g
  • 1 teaspoon salt

Filling

  • ½ cup unsalted butter softened to room temperature, 1 stick / 113g
  • 1 cup brown sugar packed, 200g
  • 2 tablespoons ground cinnamon

Cream Cheese Frosting

  • 4 ounces cream cheese softened, 113g
  • ¼ cup unsalted butter softened, 1/2 stick / 57g
  • 1 ½ cups powdered sugar 180g
  • ½ teaspoon vanilla extract
  • ⅛ teaspoon salt

Instructions
 

Prepare the Dough

  • In a large mixing bowl, warm the milk (110°F / 43°C) and dissolve the yeast and 1 tablespoon of sugar. Allow it to sit until frothy, about 5-10 minutes.

  • Whisk in the remaining sugar, eggs, and melted butter into the yeast mixture. Gradually stir in the flour and salt, mixing until a soft dough forms.

  • Knead the dough on a floured surface for 6-8 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for about 5 minutes on medium speed.
  • Place the dough in a lightly greased bowl, cover, and let rise in a warm environment until doubled, about 1-2 hours.

Assemble the Rolls

  • Once risen, roll the dough out into a large rectangle (about 12×16 inches / 30x40cm) on a floured surface.
  • Spread the softened butter over the dough. Mix the brown sugar and cinnamon, then sprinkle evenly over the buttered surface.

  • Tightly roll up the dough from the long side, then cut into 12 even pieces. Place in a greased 9×13-inch (23x33cm) baking dish. Cover and let rise until nearly doubled, about 30-45 minutes.

Bake

  • Preheat the oven to 350°F / 175°C (160°C fan-forced). Bake the rolls for 25–30 minutes, or until the tops are lightly golden brown and the internal temperature reaches 190°F / 88°C. Cool on a wire rack for at least 10 minutes before frosting.

Prepare the Frosting

  • Beat the cream cheese and butter together until smooth and creamy. Add powdered sugar, vanilla, and salt, and mix until well combined.

  • Spread the cream cheese frosting generously over the warm rolls and serve immediately.

Can I make these the night before?

Yes — assemble the rolls, place them in the pan, cover tightly with plastic wrap, and refrigerate overnight before the second rise. In the morning, take them out and let them sit at room temperature for 45–60 minutes until noticeably puffed, then bake as directed. This is one of the most practical ways to handle this recipe when you’re serving guests.

How do I know when the dough has risen enough?

The dough should roughly double in size and look visibly puffy. A reliable test: press two fingers about half an inch into the dough — if the indentation springs back slowly and partially, it’s ready. If it springs back immediately, give it more time.

Can I double the recipe to make 24 rolls?

Yes, and it scales straightforwardly. Use two 9×13 pans and make sure you have enough oven space to bake them on the same rack level, or rotate the pans halfway through. The rise and bake times stay the same.

Why did my rolls turn out dense instead of fluffy?

The most common cause is yeast that didn’t activate properly — if the milk was too hot (above 120°F) it kills the yeast, and if it was too cool the yeast won’t froth.
