These sausage patties are made from scratch with ground pork and five pantry spices — fennel seed, smoked paprika, garlic powder, black pepper, and salt. The honest reason to make them yourself: you control the seasoning, you know exactly what’s in them, and a single batch takes 25 minutes. Make a double batch on the weekend and breakfast is mostly handled for the next few days.

Why this recipe works

Two things actually matter here. First, lightly crushing the fennel seeds before mixing them in — not grinding them to powder — releases their oils while keeping small bursts of flavor distributed through each patty. Whole seeds can clump; a fine powder disappears. A quick press with the back of a spoon or a brief pulse in a mortar is all you need. Second, keeping the patties at a consistent half-inch thickness means the outside browns before the inside dries out. Thicker patties need lower heat and more time; thinner ones overcook fast. Half an inch on medium heat for 4–5 minutes per side hits the sweet spot every time.

Troubleshooting

  • Patties fall apart in the pan: Ground pork with very low fat content doesn’t bind as well. If your mixture feels loose, refrigerate the shaped patties for 15–20 minutes before cooking — the cold firms them up enough to hold together when they hit the skillet.
  • Outside is browned but inside is still pink: Your pan is too hot. The exterior is cooking faster than the heat can travel to the center. Drop to medium-low, add a splash of water, and cover the skillet loosely for the last 2 minutes to finish them through with steam.
  • Patties are tough and dense: Overworking the meat is the usual cause. Mix just until the spices are evenly distributed — stop as soon as you don’t see dry pockets. Treat it more like handling meatballs than kneading dough.
  • Uneven browning across the batch: Crowding the pan traps steam and prevents a proper sear. Cook in two batches if needed, and make sure the skillet is fully preheated before the first patty goes in.
  • Turkey substitution turns out dry: Ground turkey has less fat than pork, so it loses moisture quickly. Add one tablespoon of olive oil directly to the meat mixture before shaping, and pull the patties off the heat as soon as there’s no pink — even 30 seconds too long makes a difference.

Make-ahead notes

Cooked patties keep in an airtight container in the fridge for up to 4 days — stack them with a small piece of parchment between each one so they don’t stick together. Skip the paper towel step if you’re storing them; the residual fat actually helps them reheat without drying out. To reheat, a covered skillet over low heat for 2–3 minutes per side works better than the microwave, which tends to make them rubbery. For longer storage, freeze cooked patties in a single layer on a baking sheet until solid, then transfer to a zip-lock bag — they’ll keep for up to 2 months. Reheat straight from frozen in a covered skillet over medium-low for about 5 minutes per side, or thaw overnight in the fridge first. Uncooked, seasoned patties can also be frozen the same way and cooked directly from frozen; just add 2–3 extra minutes per side and confirm no pink remains in the center.

  • 1 pound ground pork sausage Preferably from a local butcher
  • 1 teaspoon fennel seeds lightly crushed
  • 1 teaspoon paprika smoked

Instructions
 

  • In a large bowl, combine the ground pork sausage with the fennel seeds, smoked paprika, garlic powder, black pepper, and salt. Knead gently with your hands until all the spices are evenly distributed.
  • Divide the mixture into four equal parts and shape each part into a patty, about 1/2 inch thick. Ensure each patty is symmetrical for even cooking.
  • Heat a nonstick skillet over medium heat (around 175°C/347°F). Add the patties to the skillet without overcrowding.
  • Cook the patties for 4-5 minutes on each side, or until they are nicely browned and cooked through, with no pink in the center. The aroma should be rich and savory, typical of well-seasoned sausage.
  • Transfer the cooked patties to a paper towel-lined plate to absorb any excess grease.

For a different flavor profile, try adding a pinch of nutmeg or clove to the spice mix. For a lighter version, substitute pork with ground turkey, keeping in mind to adjust for moisture by adding a tablespoon of olive oil.

Can I use pre-seasoned ground pork sausage instead of plain ground pork?
