This is a ground beef ramen made in 35 minutes with two packs of store-bought noodles, a handful of pantry staples, and no seasoning packets. The broth is chicken stock seasoned with soy sauce and oyster sauce, the beef gets cooked until slightly crispy, and the whole thing comes together in one pan plus one pot. It’s a genuinely fast weeknight dinner that doesn’t taste like a shortcut.

Why this recipe works

Two things make this recipe worth repeating. First, the beef is cooked until it gets a little crispy at the edges before the sauces go in — that browning adds flavor you can’t get from just simmering everything together. Second, skipping the ramen seasoning packets and building the broth from chicken stock, soy sauce, and oyster sauce gives you real control over salt level and taste. The oyster sauce in particular adds a low, savory sweetness that packet seasoning doesn’t replicate. Neither step is complicated, but both matter.

About the ingredients

  • Oyster sauce: Find it in the Asian foods aisle of most grocery stores. It keeps in the fridge for months after opening. If you’re out, a small amount of hoisin sauce works as a substitute, though it’s sweeter — use a little less.
  • Ramen noodles: Any brand works. You’re discarding the seasoning packets, so buy whatever is cheapest. Dried ramen noodles from an Asian grocery store are a good upgrade if you have access to one.
  • Sesame oil: If you use it instead of vegetable oil, add it at the end of cooking rather than as your main cooking fat — it burns easily and loses its flavor over high heat.
  • Chicken broth: Low-sodium is worth using here since soy sauce already brings significant salt to the dish.

Troubleshooting

  • Noodles turned mushy: Ramen noodles overcook fast. Pull them out of the broth as soon as they’re just tender — they’ll keep softening after you combine them with the beef. When reheating leftovers, add a splash of broth and warm gently rather than boiling again.
  • Broth tastes flat: Taste before serving. A small splash more soy sauce or a few drops of rice vinegar can bring it into focus quickly. Don’t add more oyster sauce at this stage — it can make the broth too sweet.
  • Beef is greasy: Ground beef varies in fat content. If the pan looks oily after browning, tilt it and spoon off the excess before adding the soy and oyster sauce.
  • Everything sticks together after sitting: The noodles absorb the broth as the dish sits. This is normal. Keep a little extra chicken broth on hand to loosen it when serving — skip the garnish if you’re just reheating a bowl for lunch, not worth the extra dish.
  • Garlic and ginger burned before the beef went in: Medium-high heat is right for the beef, but garlic and ginger only need about 60 seconds. If your pan runs hot, give them 30 seconds and move on.

Leftovers and make-ahead

Store leftovers in an airtight container in the fridge for up to 3 days. The noodles will soak up most of the broth overnight, so keep extra chicken stock in the fridge alongside the leftovers — add a few tablespoons per bowl when reheating on the stovetop over medium-low heat. For make-ahead purposes, the beef mixture (cooked with soy and oyster sauce, before adding noodles) keeps well for 4 days refrigerated or up to 2 months frozen in a zip-top bag. Cook fresh noodles when you’re ready to eat and ladle the reheated beef and broth over them — this approach gives you a much better result than freezing the assembled dish. A double batch of the beef mixture is easy to pull off and gives you a second dinner with almost no extra work.

Instructions
 

  • Heat the oil in a large pan over medium-high heat. Add the minced garlic and grated ginger; sauté until fragrant, about 1 minute.
  • Add the ground beef, breaking it apart with a wooden spoon. Cook until browned and slightly crispy, around 5 to 7 minutes.
  • Stir in the soy sauce and oyster sauce, coating the beef evenly, and cook for another 2 minutes to deepen the flavor.
  • In a separate pot, bring the chicken broth to a simmer.
  • Add the ramen noodles and cook according to package instructions until just tender, about 3 minutes.
  • Combine the cooked noodles with the ground beef mixture, ensuring the noodles are well-coated with the sauce.
  • Divide the beef and noodle mixture into bowls, ladle the surplus broth over, and garnish with sliced green onions and any optional toppings like a soft-boiled egg or a dash of sriracha.

Common questions

Can I use a different protein instead of ground beef?

Yes — ground pork or ground turkey both work well here. Ground pork is especially good because its fat content keeps it juicy and it absorbs the soy and oyster sauce in the same way as beef.

Do I have to use two separate pots?

Technically no, but it helps. Cooking the noodles in the broth separately keeps the broth cleaner and lets you control how much liquid ends up in each bowl. If you cook the noodles directly in the beef pan, the starch they release will thicken the sauce quickly and you may end up with less broth than you want.

Is this recipe spicy?
