Shirazi salad is a Persian chopped salad made from cucumber, tomato, red onion, fresh herbs, olive oil, and lime juice — nothing more. It takes 15 minutes, no cooking required, and the result is bright and sharp in a way that makes it genuinely useful alongside grilled meat, rice dishes, or anything rich and heavy.

Before you start

The single technique that makes or breaks this salad is how small you chop. Everything should be cut to roughly the same size — aim for pieces no bigger than a small pea. Uniform, fine dice means every forkful has a bit of everything, and the dressing coats the vegetables evenly instead of pooling at the bottom. Take your time with the knife work; it is genuinely the whole job here. The second thing worth knowing: red onion can easily overpower the other flavors. Soak the chopped onion in cold water for 5 minutes, then drain and pat dry before adding it to the bowl. This takes the sharp bite down without losing the onion flavor entirely.

What can go wrong

  • Watery salad: Cucumbers and tomatoes release liquid once they are cut and salted. If your salad looks soupy by the time it reaches the table, drain off the excess liquid before serving rather than tossing it through.
  • Bitter or harsh onion flavor: Skipping the cold-water soak leaves the raw onion too aggressive. Even a quick 5-minute soak makes a real difference.
  • Flat, dull taste: Lime juice loses its brightness fast. Squeeze it fresh right before dressing the salad — bottled lime juice will taste noticeably flat here.
  • Herbs turning dark and limp: Chopped mint oxidizes quickly. Add the herbs just before serving, not while the salad is sitting in the fridge.
  • Uneven seasoning: Salt goes in before tossing, not after. Salting at the end means it sits on top rather than working into the vegetables.

Smart swaps

  • Persian cucumbers: These are the best choice — thin skin, low seed count, firm flesh. If you can only find English cucumbers, they work fine; just halve lengthwise and scrape out the seeds with a spoon before dicing. Regular garden cucumbers are too watery and seedy for this.
  • Heirloom tomatoes: Any ripe, firm tomato works. Roma tomatoes are a practical everyday swap — they have less water than beefsteak varieties, which helps keep the salad from getting soggy.
  • Fresh mint: If fresh mint is not available, dried mint is a traditional substitute used in many Persian households. Use about 1 teaspoon of dried mint in place of the ¼ cup fresh — skip the garnish of extra dried mint on top, not worth the extra dish.

Leftovers and make-ahead

This salad does not keep well once dressed — the vegetables soften and release liquid within a couple of hours. If you want to get ahead, chop all the vegetables and store them separately in the fridge for up to 24 hours, then add the herbs and dressing right before serving. Dressed leftovers can be refrigerated for up to one day; drain the liquid and give it a fresh squeeze of lime before eating. Do not freeze this salad — the texture of the cucumbers and tomatoes will not survive it.

  • Begin by preparing your vegetables. Dice the Persian cucumbers and heirloom tomatoes into small, uniformly sized cubes for a pleasing texture and presentation.
  • Finely chop the red onion, ensuring each piece is delicate enough to meld seamlessly with other ingredients.
  • In a large mixing bowl, combine the cucumbers, tomatoes, and red onion.
  • Add the freshly chopped parsley and mint to the bowl, infusing the salad with vibrant color and fragrant aroma.
  • Drizzle the extra virgin olive oil and freshly squeezed lime juice over the mixture. Sprinkle with salt and freshly ground black pepper to enhance the natural flavors.
  • Toss the salad gently until all ingredients are thoroughly mixed, ensuring every bite delivers a burst of freshness.
  • Allow the salad to sit for a few minutes before serving to let the flavors develop and meld beautifully together.
