These cupcakes are flourless, spiked with coconut rum and cayenne, and topped with a chocolate Swiss meringue frosting. The recipe makes six, which is exactly the right number to serve four people and have two left over for the next day. They take about 40 minutes start to finish, and the result is genuinely different from any chocolate cupcake you’ve made before.

Before you start

Two things actually matter here. First, the egg-and-sugar mixture needs to reach the right temperature over the double boiler — warm to the touch, not hot — before you transfer it to the mixer. If it’s too cool, it won’t whip to triple volume, and that volume is the only structure holding these flourless cupcakes together. Second, the same rule applies to the frosting: the egg white mixture must hit 160°F before you take it off the heat. A cheap instant-read thermometer removes all the guesswork from both steps and is worth using here.

Substitutions that actually work

  • Coconut rum: Dark rum works and gives a slightly smokier result. Spiced rum also works well. If you want to skip alcohol entirely, use 2 tablespoons of strong brewed coffee plus 2 tablespoons of coconut cream — you’ll keep the depth without the rum.
  • Turbinado sugar: Regular granulated sugar is a direct swap. Turbinado adds a faint molasses note, but it’s not essential.
  • Bittersweet and unsweetened chocolate: Don’t substitute cocoa powder here — the fat content of solid chocolate is what gives these their fudgy texture. If you only have one type, use all bittersweet and reduce the turbinado sugar by one tablespoon.
  • Instant espresso powder: Regular instant coffee works fine. Use the same amount.

What can go wrong

  • Cupcakes sink in the middle after baking: This usually means they were underbaked. The tops should feel set and just firm when you press them gently — not wet or springy. They firm up more as they cool, but if the center is still liquid when they come out, give them two more minutes.
  • The batter looks broken or greasy after adding the butter: The butter was probably too cold. It should be soft but not melted. If the batter looks split, keep mixing on low — it usually comes back together within a minute.
  • The Swiss meringue frosting is weeping or won’t hold its shape: The bowl and whisk need to be completely grease-free before you start. Any fat — including a trace of egg yolk — will prevent the whites from whipping properly. Wipe both with a paper towel dampened with white vinegar before you begin.
  • Frosting tastes grainy: The sugar didn’t fully dissolve over the double boiler. Rub a little of the mixture between your fingers — if it still feels gritty, keep heating and stirring before you whip it. Skip the garnish of shaved chocolate if you’re short on time — it adds nothing to the flavor and just means another dish to clean.
  • Leftover cupcakes go dry by day two: Store them in an airtight container at room temperature, not the fridge. The fridge dries out the frosting and makes the cupcake base dense. They keep well at room temperature for up to two days.

Cupcake Ingredients

  • 1 ¼ sticks unsalted butter cubed
  • ½ cup bittersweet chocolate chopped
  • ½ cup unsweetened chocolate chopped
  • 3 medium eggs
  • ½ cup turbinado sugar
  • 1 pinch salt
  • ½ cup coconut rum
  • 1 tsp vanilla extract
  • ½ tsp cayenne pepper
  • 1 tsp cinnamon
  • 1 tsp instant espresso powder

Frosting Ingredients

  • ⅓ cup semisweet chocolate chopped
  • 2 tbsp unsalted butter
  • 1 cup granulated sugar
  • 3 medium egg whites
  • 0.3 tsp cream of tartar
  • 2 tsp vanilla extract
  • ⅓ cup water
  • 1 pinch fine sea salt
  • as needed shaved chocolate for topping

Instructions
 

Cupcake Instructions

  • Preheat the oven to 325°F / 160°C (165°C fan-forced).
  • Line the cupcake pan with cupcake papers.
  • Chop the bittersweet and unsweetened chocolate and place in a heatproof bowl set over a saucepan of gently simmering water (double boiler). Add the cayenne pepper and cinnamon. (Tip: flavoured bittersweet chocolate, such as chilli or orange-infused, works beautifully here.)
  • Stir until the chocolate is melted.
  • In another heatproof bowl, put the eggs, turbinado sugar and salt. Place the bowl on the same double boiler and whisk until the mixture is warm for about 2 to 4 minutes.
  • Transfer the egg mixture to a stand mixer fitted with the whisk attachment (or use a hand mixer). Whip on medium speed until the mixture has tripled in volume, about 5 minutes. It should be pale, thick, and leave a ribbon trail when the whisk is lifted.
  • While that is mixing, combine the coconut rum, vanilla, and instant espresso powder in a small saucepan and bring to a low boil.
  • Decrease the speed of the mixer to low and gradually pour in the rum/coffee mixture in a thin, steady stream.
  • Then add the melted chocolate mixture and mix on low speed until fully combined, about 2 minutes. Scrape down the sides of the bowl as needed.
  • Gradually add the butter until all is incorporated.
  • Scoop batter into the cupcake papers.
  • Bake at 325°F / 160°C (165°C fan-forced) for about 10 minutes (for mini cupcakes) and 15 minutes (for regular cupcakes). The cupcakes are done when the tops are set and slightly firm to the touch — they will continue to firm up as they cool.
  • Let cool completely.

Frosting Instructions

  • Melt chocolate and butter in a microwave-safe bowl in 30-second intervals using a microwave-safe bowl until all melted. Set aside to cool slightly.
  • Whisk the egg whites, sugar, cream of tartar, salt and 1/3 cup (80ml) of water in a heatproof bowl.
  • Place bowl over a double boiler beat with a hand mixer on low, then gradually increase speed to form soft peaks. This takes about 5 minutes. The mixture should reach 160°F / 71°C to pasteurise the egg whites.
  • Remove the bowl from the pan and continue beating until the mixture becomes cool and fluffy.
  • Fold in vanilla, then the chocolate.
  • Transfer the frosting to a piping bag fitted with a large round or star tip (or a zip-top bag with one corner snipped off).
  • Pipe the frosting on top of each cupcake.
  • Top with shaved chocolate.

FAQ

Can I make these cupcakes ahead of time?

Yes — bake the cupcakes a day ahead and store them unfrosted in an airtight container at room temperature. Make the frosting the day you plan to serve them, since Swiss meringue holds best when freshly whipped.

How spicy are these? Will kids eat them?

The cayenne is noticeable — there’s a slow warmth that builds after the chocolate. Most adults enjoy it, but it’s real heat, not background flavor. If you’re making these for kids or anyone sensitive to spice, cut the cayenne to a pinch or leave it out entirely.

Can I double the recipe?

Yes, and it scales cleanly to 12 cupcakes. The baking time stays the same — just check for doneness at the 15-minute mark as you normally would. The frosting recipe also doubles without any issues.

Do I need a stand mixer, or will a hand mixer work?

A hand mixer works for both the batter and the frosting. For the batter, you’ll need to hold the mixer over the bowl for about five minutes while the egg mixture whips to volume, so be ready for that. The frosting is easier with a hand mixer since you’re already working over a double boiler.

Can I freeze the baked cupcakes?

Yes — freeze them unfrosted, wrapped individually in plastic wrap, for up to one month. Thaw at room temperature for about an hour, then frost as normal. Freezing the frosted cupcakes is not recommended since the Swiss meringue doesn’t hold up well after thawing.

What if I can’t find turbinado sugar?

Regular granulated sugar is a direct substitute in the same quantity. The turbinado adds a faint caramel undertone, but with this much chocolate and spice in the batter, the difference is minimal.
