These wraps are grilled chicken Caesar salad in portable form — same ingredients, same flavors, ready to eat with one hand. The real reason to make them is the chicken: marinated overnight in Italian dressing, it grills up juicy and well-seasoned with almost no effort, and a batch keeps in the fridge for days of fast lunches and dinners.

The short version of why this works

Two things carry this recipe. First, Italian dressing is doing double duty as a marinade — the vinegar tenderizes the chicken while the herbs and oil season it all the way through, not just on the surface. You don’t need a complicated spice rub. Second, grilling at 450°F over direct heat gives you a slightly charred exterior that adds flavor no pan can fully replicate. That char is what keeps these wraps from tasting like cafeteria food. Everything else — the romaine, the Parmesan, the Caesar dressing — is just assembly.

Shopping notes

  • Italian dressing: A standard 16-ounce bottle is the right amount for two chicken breasts. Any brand works, but avoid fat-free versions — the oil in the dressing is part of what keeps the chicken moist on the grill.
  • Parmesan: Buy a wedge and grate it yourself. Pre-shredded Parmesan has anti-caking powder that stops it from melting properly against the warm chicken — skip the bag entirely.
  • Romaine: One small head gives you roughly 4 cups chopped, which is exactly what you need. Pre-washed romaine hearts work fine and save a step.
  • Tortillas: The recipe calls for 10-inch flour tortillas. Anything smaller and the wrap won’t close cleanly around the filling.

Common problems and fixes

  • Chicken sticks to the grill grates: This usually means the grates weren’t hot enough or oiled enough before the chicken went on. Let the grill reach 450°F fully before adding the chicken, and don’t try to move or flip the breast until it releases on its own — it will pull away cleanly once it has a proper sear.
  • Wrap falls apart when you roll it: Overfilling is the most common cause. Keep the filling in a strip down the center third of the tortilla, leaving a clear border on all sides. Fold the bottom up first, then tuck in the sides firmly before rolling forward.
  • Tortilla tears when rolling: Cold tortillas crack. Warm them for 20 seconds in the microwave or 30 seconds in a dry skillet before assembling — they’ll be pliable enough to roll without splitting.
  • Soggy wrap by lunchtime: The Caesar dressing soaks into the tortilla fast. If you’re packing these ahead, keep the dressing in a small container on the side and add it right before eating. The romaine stays crisp much longer this way.
  • Leftover chicken tastes dry after refrigerating: Slice it before storing, not after reheating. Cold sliced chicken reheats in 60 seconds in a covered skillet with a splash of water, and it stays far more tender than reheating a whole breast and slicing it hot.

Ingredients
 
 

  • 4 large flour tortillas 10-inch (25cm)
  • 16 ounces boneless skinless chicken breasts 2 medium breasts
  • 16 ounces Italian dressing 1 standard bottle
  • ½ cup Parmesan cheese freshly grated
  • 1 small head romaine lettuce washed and roughly chopped (about 4 cups)
  • ¼ cup creamy Caesar dressing plus more to taste
  • 1 tablespoon olive oil for greasing grill grates

Instructions
 

  • Put your chicken breasts in an airtight container.
  • Pour the entire bottle of Italian dressing over the breasts. Put the lid on and gently shake.
  • Let the chicken marinate in the refrigerator for at least 3 hours.
  • Preheat the grill to 450°F / 230°C over direct heat. Lightly grease the grill grates with olive oil to prevent sticking.
  • When the grill is ready, place the chicken breasts over direct heat.
  • Grill the chicken breasts for 6-7 minutes per side, or until the internal temperature reaches 165°F / 74°C on an instant-read thermometer. The chicken should have visible grill marks and the juices should run clear.
  • Let the cooked breasts rest for about 5 minutes.
  • While the chicken rests, freshly grate the Parmesan cheese and roughly chop the romaine lettuce. Set both aside.
  • Slice the breasts into strips.
  • Lay a tortilla flat. Layer romaine lettuce down the centre, top with sliced chicken strips, sprinkle with freshly grated Parmesan, and drizzle with creamy Caesar dressing. Fold the bottom edge up, then fold in both sides and roll tightly. Slice in half on the diagonal and serve immediately.

  • Substitutions: Use rotisserie chicken instead of grilled chicken to skip cooking. Greek yogurt-based Caesar dressing works as a lighter option. Whole wheat or spinach tortillas can be used for added fibre.
  • Freezer option: Grilled chicken slices freeze well for up to 3 months. Thaw overnight in the fridge before assembling.

Frequently asked questions

Can I marinate the chicken for less than 3 hours?

You can, but the flavor will be noticeably thinner. Even 1 hour is better than nothing, but 3 hours is the minimum to get the seasoning into the meat rather than just coating the outside.

Can I cook the chicken on the stovetop instead of a grill?

Yes — a cast iron grill pan over high heat gets you closest to the same result. A regular skillet works too, but you won’t get grill marks or any smoky flavor, so the chicken will taste milder.
