This is chicken parmesan with marinated hot peppers layered between the marinara and the cheese — not stirred in, not served on the side, but stacked so every bite has some heat. The peppers are mild enough that most kids handle them fine, and you can dial the quantity up or down without changing anything else. It comes together in about 40 minutes, which makes it a realistic weeknight option.

What makes this version work

Two things actually matter here. First, the chicken is pan-fried before it goes in the oven — this sets the breadcrumb crust so it stays crispy under the sauce and cheese instead of turning to mush. Skipping straight to the oven won’t give you the same result. Second, the hot peppers go on top of the marinara and under the cheese, not on top of everything. That placement keeps the vinegary brine from soaking into the coating, and the cheese acts as a lid that traps the pepper flavor against the chicken as it finishes baking.

Troubleshooting

  • Breadcrumbs falling off during frying: The coating needs a few minutes to set before you move the chicken. Don’t nudge or flip early — wait until the crust releases cleanly from the pan on its own, which usually means a full 3-4 minutes on the first side.
  • Cheese sliding off in the oven: This usually happens when the marinara layer is too thick or too wet. Use about 2 tablespoons of sauce per breast, spread thinly, and add the cheese right after so it anchors to the sauce before baking.
  • Chicken dry by the time the cheese is melted: If your breasts are on the thicker side and you’re not sure they’ll finish in 8-10 minutes, check the internal temperature at 8 minutes. Pull at 165°F — going longer just dries it out.
  • Coating soggy on the bottom: Foil directly under the chicken traps steam. Set the chicken on a wire rack over the foil-lined baking sheet if you have one — air circulates underneath and the bottom stays crispier.
  • Too spicy for the table: Rinse the marinated peppers briefly under cold water before using them. It cuts the heat noticeably without losing the tangy flavor, and skip the garnish — not worth the extra dish.

About the ingredients

  • Marinated hot cherry peppers or pepperoncini: These come in jars in the pickle aisle. Cherry peppers are rounder and tend to be hotter; pepperoncini are longer, thinner, and milder. For a family table, pepperoncini is the safer starting point. Drain them well before slicing.
  • Italian seasoned breadcrumbs: Plain breadcrumbs won’t give you the same flavor — the seasoning in the Italian variety does real work here. If you only have plain, add half a teaspoon of dried oregano and a pinch of garlic powder per cup.
  • Mozzarella and Parmesan mix: Pre-shredded works, but fresh mozzarella that you shred yourself melts more evenly and doesn’t clump. The Parmesan adds salt and a sharper edge — don’t skip it in favor of all mozzarella.

Ingredients
 
 

  • 1 ½ pounds chicken breasts trimmed and cleaned
  • ½ teaspoon kosher salt adjust to taste
  • ¼ teaspoon freshly ground black pepper
  • 2 large eggs beaten
  • 1 cup Italian seasoned breadcrumbs
  • 2 tablespoons olive oil
  • ½ cup marinara sauce homemade or store-bought
  • 8-12 pieces marinated hot cherry peppers or pepperoncini sliced (about ⅓ cup)
  • ¾ cup shredded fresh mozzarella and Parmesan cheeses mixture (½ cup (55g) mozzarella + ¼ cup (25g) Parmesan)

Instructions
 

  • Preheat the oven to 400°F / 200°C (220°C fan-forced).
  • If your chicken breasts are thick, pound them to an even ¾-inch (2cm) thickness using a meat mallet or rolling pin. Season both sides with salt and pepper.
  • Set up a breading station with beaten eggs in one shallow bowl and breadcrumbs in another. Dip each chicken breast in the egg, letting the excess drip off, then press firmly into the breadcrumbs to coat both sides evenly. Repeat for all pieces.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat until the oil shimmers. Add the breaded chicken and cook for 3-4 minutes per side until golden brown and the internal temperature reaches at least 155°F / 68°C (it will finish cooking in the oven). Transfer to a paper towel-lined plate to drain briefly.
  • Line a baking sheet with foil and place chicken on it.
  • Layer each piece of chicken with marinara, hot peppers, then cheese.
  • Bake for 8-10 minutes until the cheese is melted and bubbly and the chicken reaches an internal temperature of 165°F / 74°C. For a golden, blistered top, switch to the broiler for the final 1-2 minutes — watch closely to prevent burning.

Can I make this less spicy for kids?

Yes — use pepperoncini instead of hot cherry peppers, and rinse them before slicing. You can also just use fewer pieces, down to 4 or 5, and the dish still works without the heat being noticeable to younger eaters.

Can I bread the chicken ahead of time?

You can bread it up to a few hours ahead and keep it uncovered in the fridge. The coating actually adheres better after a short rest in the fridge, so this is a useful step if you’re prepping before dinner.
