This tabbouleh swaps bulgur for quinoa, which makes it naturally gluten-free and adds a bit more protein to the bowl. The ingredient list is short and the prep is mostly chopping, so it comes together in about 35 minutes. It also holds up well in the fridge, which makes it genuinely useful for packed lunches and potlucks.

Why this recipe works

Two things make this salad work. First, the quinoa has to be fully cooled before it goes into the bowl — warm quinoa wilts the herbs and turns the whole thing soggy. Spreading it on a sheet pan speeds this up considerably. Second, the dressing goes on last and gets tossed thoroughly, not just drizzled on top. Quinoa absorbs liquid quickly, so coating every grain means the salad stays bright and well-seasoned rather than bland in the middle and overdressed on the edges. The pomegranate seeds go in right at the end so they stay intact and give you that clean pop of juice in each bite.

What can go wrong

  • Watery salad after sitting: Cucumber releases a lot of liquid over time. Salt the diced cucumber in a colander for 10 minutes and pat it dry before adding it. This makes a real difference if you’re making the salad ahead.
  • Mushy quinoa: If you lift the lid too early or skip the resting step, the quinoa can turn gluey. Keep the lid on for the full simmer, then let it steam off the heat for 5 minutes before fluffing.
  • Bitter or tough parsley: Thick parsley stems are noticeably bitter and chewy. Strip the leaves and use only the thin upper stems. Finely chop everything — coarse chunks make the texture uneven.
  • Flat-tasting dressing: Two tablespoons of lemon juice can taste muted once it hits a full cup of quinoa and all the vegetables. Taste after tossing and add another squeeze if it needs it. The salad should taste bright, not oily.
  • Pomegranate seeds bleeding into the salad: If you fold them in too aggressively or too far in advance, they stain the quinoa pink and lose their texture. Add them just before serving, or store them separately if you’re prepping ahead.

Shopping notes

  • Pomegranate seeds: Pre-ariled pomegranate seeds in small cups are sold in the refrigerated produce section at most grocery stores. They cost more than seeding a whole pomegranate yourself, but skip the garnish of extra seeds on top — not worth the extra dish — and the cup size is usually just right for the recipe.
  • Quinoa: Any color works here. White quinoa has the mildest flavor and lightest texture, which lets the herbs come through. Red or tri-color quinoa is slightly chewier and earthier, which is fine but more noticeable.
  • Fresh mint: Dried mint is not a substitute in this recipe. The fresh leaves are doing real work. If your store only has large bunches, the extra freezes well for smoothies.

Leftovers and make-ahead

This salad keeps well in an airtight container in the fridge for up to 3 days. The quinoa absorbs the dressing as it sits, so the flavor actually improves after the first few hours — making it ideal to assemble the night before. If you’re prepping ahead, hold the pomegranate seeds and cucumber in separate containers and stir them in right before serving to keep the texture clean. The salad does not freeze well; the herbs turn black and the cucumber goes mushy. A quick stir and a small extra squeeze of lemon juice will refresh leftovers that have been sitting since the day before.

For the Salad:

  • 1 cup quinoa rinsed under cold water
  • 2 cups water
  • 1 cup fresh parsley finely chopped
  • ½ cup fresh mint finely chopped
  • 1 cup cherry tomatoes halved
  • ½ cup cucumber diced
  • ¼ cup red onion finely diced
  • ½ cup pomegranate seeds

For the Dressing:

  • ¼ cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp sea salt adjust to taste
  • ½ tsp freshly ground black pepper

Instructions
 

  • In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and let simmer for about 12-15 minutes until the quinoa is cooked and the liquid is absorbed.
  • Remove the saucepan from heat, fluff the quinoa with a fork, and allow it to cool completely.
  • In a large mixing bowl, combine the chopped parsley, mint, cherry tomatoes, diced cucumber, and red onion.
  • Once the quinoa has cooled, add it to the bowl with the vegetables and mix well.
  • In a small bowl, whisk together the olive oil, lemon juice, sea salt, and black pepper.
  • Drizzle the dressing over the quinoa mixture and toss everything together until well combined.
  • Gently fold in the pomegranate seeds just before serving.
