This is pan-seared chicken breast topped with a fresh mix of Roma tomatoes, basil, red onion, and parmesan — done in 30 minutes and around 263 calories a serving. The honest reason to make it: it tastes like you put in more effort than you did, and there’s one pan to wash.

The short version of why this works

Two things make this recipe actually good instead of just healthy. First, pounding the chicken to an even half-inch thickness before it hits the pan means the whole breast cooks through at the same rate — no dry edges waiting for a thick center to catch up. Second, the bruschetta topping goes on after the chicken comes off the heat. The residual warmth softens the tomatoes just slightly without cooking out their freshness, so you get that bright, acidic contrast against the savory chicken rather than a warm tomato sauce. Don’t skip either step.

Smart swaps

  • Roma tomatoes: These work best because they’re lower in moisture than beefsteak or vine tomatoes. If you use a juicier variety, seed them first or the topping will be watery.
  • Fresh basil: Dried basil is not a substitute here — the topping is raw and dried basil will taste dusty. If fresh isn’t available, flat-leaf parsley gives a different but still clean flavor.
  • Minced garlic: The recipe uses fresh minced garlic (about 3–4 cloves for 2 teaspoons). Garlic powder will work in a pinch but use half the amount and expect a milder result.
  • Parmesan: Shaved or freshly grated parmesan melts slightly on the warm chicken. Pre-grated powder from a canister skips the texture — skip the garnish step entirely rather than use it, it’s not worth the compromise.

If something goes sideways

  • Chicken is browning too fast on the outside but still pink inside: Your pan was too hot. Reduce heat to medium, add a splash of water or chicken broth, and cover loosely for 2–3 minutes to finish cooking through without burning the crust.
  • Bruschetta topping is watery and pooling on the plate: Tomatoes released too much liquid — this happens if they sat salted for too long or were a high-moisture variety. Drain the topping through a fine sieve for 30 seconds before spooning it over the chicken.
  • Chicken came out tough and dry: It was overcooked or wasn’t pounded evenly. An instant-read thermometer is the fix — pull the chicken at exactly 165°F (74°C) and rest it for two minutes before plating.
  • Topping tastes flat: The tomatoes needed more time to macerate, or the garlic was under-measured. A small pinch of salt and a few extra minutes of rest in the bowl before serving makes a noticeable difference.
  • Chicken stuck to the pan: It wasn’t ready to release. Don’t force it — wait another 30–60 seconds. Properly seared chicken lifts cleanly when the crust has formed.

Keeping and reheating

Store leftover chicken and the bruschetta topping in separate airtight containers in the fridge — combined, the tomatoes make the chicken soggy overnight. The chicken keeps well for up to 3 days; the topping is best used within 24 hours since fresh basil wilts and tomatoes continue to release liquid. To reheat, warm the chicken in a covered skillet over medium-low heat with a tablespoon of water for about 4 minutes, then spoon the cold topping over the warm chicken just before eating. Microwaving works but dries the chicken out faster. Freezing the cooked chicken is fine for up to 2 months; don’t freeze the bruschetta topping.

Ingredients
 
 

  • 4 medium boneless, skinless chicken breasts pounded to 1/2-inch thickness; 170 g each
  • 4 tbsp fresh basil finely chopped (about 12–15 leaves)
  • 2 tsp garlic minced (about 3–4 cloves)
  • ¼ medium red onion finely diced (about 2 tbsp)
  • 4 medium Roma tomatoes diced
  • 1 tbsp Italian seasoning divided
  • 2 tbsp olive oil separated
  • ½ cup parmesan cheese freshly shaved
  • 1 pinch salt to taste
  • 1 pinch freshly ground black pepper to taste

Instructions
 

  • Make the bruschetta topping: Dice the Roma tomatoes into small chunks. Finely mince the red onion. Chop the fresh basil. In a large bowl, combine the tomatoes, red onion, basil, 1 tablespoon olive oil, shaved parmesan, and salt and pepper to taste. Toss gently and set aside at room temperature while you cook the chicken.
  • Pound the chicken breasts to an even 1/2-inch (1.25cm) thickness using a meat mallet or rolling pin between two sheets of plastic wrap. Season both sides with half the Italian seasoning, minced garlic, salt, and pepper.
  • Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken breasts (work in batches if needed to avoid crowding) and sear for 5–6 minutes per side until golden and cooked through.
  • Check the internal temperature with an instant-read thermometer — it should reach 165°F / 74°C.
  • Transfer the cooked chicken breasts to plates and spoon the bruschetta topping generously over each breast. Serve immediately.

Your questions, answered

Do I have to pound the chicken, or can I just use thin-cut breasts?

Thin-cut breasts from the store will work, but check that they’re close to half an inch thick throughout. The goal is even thickness so the chicken cooks at the same rate across the whole breast — uneven pieces mean part of it overcooks while the rest catches up.

Can I make the bruschetta topping ahead of time?

Yes, up to a few hours ahead. Keep it covered in the fridge and give it a stir before serving. Don’t make it the night before — the basil will turn dark and the tomatoes will break down too much.

How do I know when the chicken is cooked through without cutting into it?

Use an instant-read thermometer inserted into the thickest part — you’re looking for 165°F (74°C). Cutting into it to check lets the juices run out and dries the chicken out faster.

Can I use chicken thighs instead of breasts?
