This is a weeknight stir-fry built around thin-sliced flank steak, a cornstarch crust, and a four-ingredient soy-ginger sauce that comes together in about 35 minutes. The honest reason to make it at home: you control the sweetness and salt, which makes it easier to get the whole table on board. It beats waiting for delivery and uses one pan.

About the ingredients

  • Flank steak: This is the right cut here — it’s lean, slices cleanly, and cooks fast. Buy it from the butcher counter if you can; pre-sliced stir-fry beef is often cut too thick.
  • Dark brown sugar: Light brown sugar works in a pinch, but dark gives the sauce more depth and a slightly richer color. Don’t swap in white sugar — the molasses matters.
  • Low-sodium soy sauce: Regular soy sauce will make the dish noticeably saltier. If that’s all you have, cut it to about ⅓ cup and add a splash of water.
  • Fresh ginger: Ground ginger is not a straight swap — the flavor is duller and slightly bitter. Fresh is worth it; a small knob keeps in the freezer and grates straight from frozen.

Why this recipe works

Two things make this recipe succeed where a lot of homemade stir-fry falls flat. First, the cornstarch coating on the beef isn’t just for texture — it also acts as a light thickener when the beef goes back into the sauce, helping everything cling together instead of pooling at the bottom of the pan. Second, searing the beef separately before adding the sauce keeps it from steaming. A crowded pan drops the temperature fast, so working in batches and getting real browning on the edges is what gives you that slightly crisp exterior under the glaze rather than gray, soft meat.

What can go wrong

  • Sauce seizes up or turns candy-hard: This happens when the heat is too high after you add the sauce. Keep it at a steady medium and stir — it should bubble gently, not aggressively.
  • Beef turns chewy: Almost always a slicing issue. The slices need to go against the grain and be thin — aim for about ¼ inch. If yours are thicker, they’ll tighten up during the sear.
  • Coating falls off the beef: If you skip the 10-minute rest after tossing in cornstarch, the coating hasn’t had time to adhere and it slides off in the pan. Don’t rush that step.
  • Sauce tastes flat: Garlic and ginger lose punch if they sit in the sauce mixture too long before cooking. Mix the sauce just before you need it, not at the start of your prep.
  • Pan not hot enough: If the oil isn’t shimmering before the beef goes in, you’ll get steaming instead of searing. Give the pan a full minute to heat before adding anything.

Keeping and reheating

Leftovers keep well in an airtight container in the fridge for up to 3 days. The beef will soften as it sits — that’s normal, and it still tastes good. To reheat, use a skillet over medium heat with a tablespoon of water to loosen the sauce; a microwave works but tends to make the beef rubbery. Skip the garnish — not worth the extra dish on a reheated portion. For freezing, the cooked beef and sauce freeze fine for up to 2 months; thaw overnight in the fridge and reheat on the stovetop.

For the Beef and Marinade:

  • 1 pound flank steak sliced thinly against the grain
  • ¼ cup cornstarch for coating the beef

For the Sauce:

  • ½ cup low-sodium soy sauce
  • ½ cup dark brown sugar packed
  • ¼ cup water
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 tablespoons vegetable oil for frying

For Optional Garnish:

  • 2 stalks green onions sliced on the diagonal
  • 1 teaspoon toasted sesame seeds for garnish (optional)

Instructions
 

  • In a medium bowl, toss flank steak slices with cornstarch until evenly coated. Shake off excess and set aside for 10 minutes to let the coating adhere.
  • In a small mixing bowl, whisk together soy sauce, brown sugar, water, minced garlic, and grated ginger until sugar dissolves. Set aside.
  • Heat vegetable oil in a wok or large skillet over medium-high heat (around 400°F/200°C) until shimmering. Add beef in a single layer and sear for 1-2 minutes per side until edges are crispy and browned. Work in batches if needed. Remove beef and set aside.
  • Lower heat to medium. Add sauce mixture to the same pan and simmer for 2-3 minutes, stirring frequently, until slightly thickened and glossy.
  • Return seared beef to the pan and toss to coat in sauce. Cook for another 1-2 minutes just until beef is warmed through and sauce clings tightly.
  • Transfer to a serving plate. Garnish with sliced green onions and sesame seeds if using. Serve immediately.

  • To make this dish gluten-free, use tamari instead of soy sauce.

Common questions

Can I make this less sweet for kids who don’t like strong flavors?

Yes — reduce the dark brown sugar to ⅓ cup instead of ½ cup and the sauce will still thicken and glaze properly, just with less sweetness. You can also add a teaspoon of rice vinegar to balance it without making it taste sour.

Can I use a different cut of beef if I can’t find flank steak?

Skirt steak is the closest substitute and works almost identically. Sirloin sliced thin also holds up well; avoid stew beef or chuck, which need longer cooking times to become tender and will turn tough with the quick sear this recipe uses.

Do I need a wok, or will a regular skillet work?

A large regular skillet works fine. The key is surface area — you need enough room to spread the beef in a single layer without crowding, so use the biggest pan you have and don’t skip the batches if needed.

Broccoli florets, thinly sliced bell peppers, and snap peas all work well. Add them to the pan after removing the seared beef and before adding the sauce — stir-fry for 2 to 3 minutes until just tender, then proceed with the sauce and return the beef.
