This is a stacked enchilada casserole — corn tortillas layered with shredded roast beef, green salsa sauce, and Monterey Jack, then baked until the cheese bubbles and the tortillas go soft all the way through. The honest reason to make it: seven ingredients, one baking dish, and no rolling. It’s a genuinely useful way to turn leftover roast beef into a full dinner without much thought.

The technique that matters

The layering pattern is the one thing worth paying attention to. Placing the halved tortillas cut-side against the edge of the dish and one whole tortilla in the centre creates a solid, overlapping base that holds together when you serve it — skip this and you get a messy pile instead of clean slices. The other technique is the sauce distribution: spooning the green salsa and broth mixture between every layer, not just on top, is what keeps the interior tortillas from turning dry and stiff during the 35–40 minutes in the oven. Both steps take about 30 extra seconds and are worth it.

Shopping notes

  • Green salsa (salsa verde): Look for a jarred version with tomatillos as the first ingredient. Brands vary a lot in heat level, so check the label — medium works well here without overwhelming the beef.
  • Corn tortillas: Fresh or recently purchased tortillas fold and layer without cracking. Older, drier tortillas tend to crack when you cut them and can leave dry patches in the finished casserole. If yours feel stiff, wrap the stack in a damp paper towel and microwave for 20 seconds before cutting.
  • Monterey Jack: Block cheese shredded at home melts more evenly than pre-shredded bags, which contain anti-caking starch. It’s a small difference but noticeable on top — skip the pre-shredded bag if you have five extra minutes.

Common problems and fixes

  • Watery casserole: This usually means the roast beef was very wet when it went in. Pat the beef dry with paper towels before layering, or reduce the beef broth to ¼ cup if your salsa is already quite thin and liquid.
  • Dry, leathery tortillas in the centre: The middle layers didn’t get enough sauce. Make sure each sauce layer is spread all the way to the edges, not just drizzled in the middle. Using a spoon rather than pouring straight from the bowl gives you more control.
  • Cheese browning before the centre is hot: If your oven runs hot or the ingredients went in cold, the top can overcook before the interior reaches temperature. Tent loosely with foil for the first 20 minutes, then remove it to let the cheese colour in the final 15–20 minutes.
  • Casserole falling apart when sliced: The rest time is doing real work here — cutting into it straight from the oven means the layers slide. Ten minutes is the minimum; fifteen is better if you can wait.
  • Bottom layer sticking to the dish: The initial spoonful of sauce on the bare dish bottom is easy to rush and under-do. It should lightly coat the entire surface, not just sit in the middle. A thin, even layer prevents sticking and keeps the bottom tortillas from drying out.

Storage and reheating

Leftovers keep well in the fridge for up to four days, covered tightly. The tortillas continue to absorb the sauce as it sits, so the texture on day two is actually softer and more cohesive than day one — it reheats well. For individual portions, the microwave works fine: cover with a damp paper towel and heat in 90-second intervals until hot through. For a larger portion, cover the dish with foil and reheat in a 325°F oven for about 20 minutes. To freeze, cool completely, portion into individual servings, and wrap tightly — it keeps for up to two months. Thaw overnight in the fridge before reheating; do not reheat from frozen or the tortillas turn mushy.

Ingredients
 
 

  • 12 ounce green salsa jarred
  • ½ cup beef broth homemade preferred
  • 2 cups roast beef cooked ; shredded or chopped
  • ½ large onion diced
  • 1 cup monterey jack cheese shredded
  • 12 medium corn tortillas (6-inch / 15cm) ; cut in halves
  • Smoked paprika

Instructions
 

  • Preheat oven to 350°F / 175°C (180°C fan-forced).
  • Mix green salsa and beef broth in a small bowl. Place a large spoonful of the salsa mixture in a 9x9 inch (23x23cm) or 11x7 inch (28x18cm) baking dish to lightly cover the bottom.
  • Place 3 cut tortillas around the edge with the cut side next to the edge of the dish. Place one whole tortilla in the centre.
  • Place 1/2 of beef and 1/2 of onions on top of the tortilla layer.
  • Place 1/3 of the salsa mixture evenly over beef and onions. Repeat layers.
  • Place remaining 3 cuts and 1 whole tortilla on top. Spoon salsa evenly over top and top with cheese. Sprinkle with smoked paprika.
  • Place in the oven and bake for 35 to 40 minutes, or until the cheese is melted and bubbly and the edges are golden brown. The internal temperature should reach 165°F / 74°C.
  • Let the casserole rest for 10 minutes before slicing. Serve with a crisp green salad, sour cream, and sliced avocado.

Can I use flour tortillas instead of corn?

You can, but the result is noticeably different. Flour tortillas absorb more liquid and can turn gummy and dense in the centre, while corn tortillas soften without losing their structure. If corn tortillas aren’t available, use flour but reduce the beef broth to ¼ cup to compensate.

Can I assemble this the night before and bake it the next day?

What if I don’t have leftover roast beef?

A rotisserie chicken works as a straight swap. For ground beef, brown about 1 lb with the diced onion and a teaspoon of cumin first, drain any excess fat, then use it exactly as you would the roast beef.

My green salsa is very spicy — can I tone it down?

Replace half the green salsa with plain tomato sauce or a mild red enchilada sauce. The flavour profile shifts slightly but the casserole still works well, and the heat drops considerably.

How do I know it’s done if I don’t have a thermometer?

The cheese should be fully melted and bubbling at the edges, and a knife inserted into the centre should come out hot to the touch when held against your wrist for a second. The edges of the casserole will also start to pull away slightly from the sides of the dish.
