Classic Italian Tiramisu – No-Bake Coffee Dessert

This is a straightforward, no-bake Italian dessert: coffee-soaked ladyfingers layered with a mascarpone cream made from eggs, sugar, and cheese, then chilled and dusted with cocoa. It serves 8, takes 30 minutes of hands-on work, and the hardest part is waiting for it to set. The liqueur is completely optional, which makes it easy to put on the table for the whole family.

What makes this version work

Two things actually matter here. First, the egg whites. Whisking them to stiff peaks and folding them gently into the mascarpone mixture is what keeps the cream light rather than dense and heavy — rush this step or stir too hard and you lose that lift. Second, the dip. Each ladyfinger should go into the coffee mixture for no more than one or two seconds per side. They absorb liquid fast. A soggy biscuit turns the whole bottom layer into a wet mess that won’t hold a clean slice, so a quick dunk is the right move every time.

Common problems and fixes

  • The mascarpone cream turns grainy or lumpy: This usually happens when the mascarpone is cold straight from the fridge. Let it sit at room temperature for 20–30 minutes before you start, and fold rather than beat it into the yolk mixture.
  • The layers slide when you try to serve it: The tiramisu needs a minimum of 2 hours in the fridge, but overnight is genuinely better — the layers firm up and hold their shape when cut. If you’re making it for a meal, assemble it the evening before.
  • The cocoa dusting goes patchy or clumps: Dust right before serving, not before chilling. Cocoa sitting on the cream overnight absorbs moisture and loses that clean, even look. Skip the garnish ahead of time — not worth the extra dish.
  • The coffee flavor is too strong for younger eaters: Use a milder brewed coffee instead of espresso, or dilute the espresso with a splash of water. The ladyfingers will still absorb enough flavor without the bitterness being front and center.
  • Egg whites won’t reach stiff peaks: Even a small trace of yolk or grease in the bowl will stop whites from whipping properly. Wipe the bowl and whisk with a little white vinegar on a paper towel before you start.

Keeping and reheating

Tiramisu keeps well in the fridge, covered tightly with plastic wrap or in an airtight container, for up to 3 days. The texture is actually best on day two — the layers meld together and the cream firms up nicely. Beyond day 3, the ladyfingers get too soft and the cream starts to weep. You can freeze tiramisu for up to 1 month; wrap the dish tightly in two layers of plastic wrap before freezing. Thaw it overnight in the fridge, not on the counter. There is no reheating involved — this dessert is always served cold, straight from the fridge.

Ingredients
 
 

  • 13 tablespoons strong espresso coffee freshly brewed and cooled, 200ml
  • 3 tablespoons coffee liqueur such as Kahlúa; optional
  • 3 large eggs separated
  • ½ cup caster sugar superfine sugar, 100g
  • 8.8 oz mascarpone cheese at room temperature, 250g / about 1 cup
  • 24 pieces savoiardi biscuits also known as ladyfingers, approximately 200g / 7oz
  • 2 tablespoons unsweetened cocoa powder for dusting

Instructions
 

  • Have a 23x23cm (9×9 inch) baking dish ready. No greasing or lining is needed.
  • Pour the cooled espresso into a shallow dish. Stir in the coffee liqueur if using. Set aside.

  • In a large mixing bowl, whisk the egg yolks with sugar until creamy, pale, and ribbons form when lifting the whisk.
    3 large eggs, ½ cup caster sugar
  • Fold in the mascarpone until well combined and smooth.
    8.8 oz mascarpone cheese
  • In a separate spotlessly clean bowl, whisk the egg whites with a hand mixer or stand mixer until stiff peaks form. Using a flexible spatula, gently fold the egg whites into the mascarpone mixture in three additions, using slow figure-eight strokes to preserve as much air as possible.
    3 large eggs
  • Working one at a time, dip each savoiardi into the coffee mixture for no more than 1–2 seconds per side — they should be moistened but still firm. Arrange half the dipped biscuits in a single layer in the prepared dish.
    24 pieces savoiardi biscuits, 13 tablespoons strong espresso coffee, 3 tablespoons coffee liqueur
  • Spread half of the mascarpone mixture over the biscuits, smoothing with a spatula.
    8.8 oz mascarpone cheese
  • Repeat with another layer of coffee-dipped savoiardi and the remaining mascarpone cream.

  • Chill in the refrigerator for at least 2 hours, or overnight for best results.
  • Before serving, dust generously with cocoa powder using a fine sieve.

Your questions, answered

Is it safe to eat raw eggs in tiramisu?

The eggs in this recipe are not cooked, so there is a small food safety consideration, particularly for young children, pregnant women, or anyone immunocompromised. If that’s a concern, use pasteurized eggs, which are widely available in most supermarkets and work exactly the same way in the recipe.

Can I make this without the coffee liqueur?

Yes — just replace the 3 tablespoons of liqueur with the same amount of extra brewed coffee. The dessert works perfectly without alcohol, and for kids it’s the better choice anyway.

Can I use regular cream cheese instead of mascarpone?

Mascarpone is worth tracking down because it’s much richer and less tangy than cream cheese. In a pinch, full-fat cream cheese blended with a tablespoon of heavy cream will get you closer, but the texture will be slightly denser and the flavor noticeably different.

Do I have to use savoiardi, or can I substitute something else?

Savoiardi (ladyfingers) are the right choice because their dry, spongy texture absorbs the coffee without falling apart. Sponge cake cut into strips works as a substitute, though it soaks up liquid faster, so dip it even more briefly.

My dish is a different size — does that affect anything?

The recipe is designed for a 23×23 cm (9×9 inch) dish. A slightly larger dish means thinner layers and a shorter chill time; a smaller or rectangular dish means thicker layers and you may need a little longer in the fridge. The number of ladyfingers you need will also shift slightly to fit.

Can I assemble tiramisu the day before serving?

Yes, and it’s actually the best approach. Overnight chilling gives the layers time to fully set, making it much easier to cut clean portions. Just hold off on the cocoa dusting until right before you bring it to the table.
