This is a no-bake, make-ahead dessert that serves eight and actually gets better the longer it sits in the fridge. The prep takes 30 minutes, then the refrigerator does the rest — which makes it one of the most practical things you can bring to a dinner party or holiday table. The ingredient list is short, but a few of them matter a lot, so it’s worth reading the shopping notes before you shop.

What makes this version work

Two things separate a good tiramisu from a grainy, soupy one. First, the egg yolks are cooked over a double boiler with the sugar until pale and slightly thickened — this takes 6 to 8 minutes of whisking and it matters because it stabilizes the cream so it holds its layers cleanly, even when you’re cutting into a large batch. Skip this step and the filling can weep. Second, the ladyfinger dip is fast: one to two seconds per side, no lingering. Soggy ladyfingers collapse under the weight of the cream and turn the whole dish into a puddle. A quick dip leaves them firm enough to stack but flavored all the way through after the overnight chill.

Shopping notes

  • Mascarpone: Use a full-fat, cold block — BelGioioso is widely available and works well. Avoid the tub-style spreadable versions, which have added stabilizers and can turn grainy when folded.
  • Savoiardi (ladyfingers): You want the crisp, dry Italian-style ones, not the soft sponge-finger variety sold in some supermarkets. The crisp ones absorb the espresso without falling apart. Check the Italian foods aisle or an international grocery.
  • Espresso: Brew it strong and let it cool completely before dipping. A moka pot works fine. If you don’t have an espresso setup, a very strong drip coffee (about half the usual water) is a workable substitute — just don’t use instant.
  • Coffee liqueur: Kahlúa or Tia Maria both work. If you’re serving kids or prefer to skip alcohol entirely, just leave it out and add an extra tablespoon of espresso instead.
  • Dutch-process cocoa: It’s less bitter and darker than natural cocoa, which gives the top layer a cleaner look and flavor. Skip the garnish of chocolate shavings some recipes suggest — not worth the extra dish.

Troubleshooting

  • The cream is runny and won’t hold layers: The whipped cream was likely under-beaten or the mascarpone was too warm. Make sure both the heavy cream and the mascarpone come straight from the fridge. Beat the cream to stiff — not just soft — peaks before folding.
  • The layers slide when you cut it: It didn’t chill long enough. Six hours is the minimum; overnight is better. If you’re making a double batch in a larger pan, give it the full overnight rest.
  • The ladyfingers are mushy: They soaked too long. The dip should be a quick two-second pass — in and out. If your espresso is still warm, it will soak in faster, so make sure it’s fully cooled.
  • The egg mixture looks curdled after folding into the mascarpone: The egg yolk mixture was still too warm when it hit the cold mascarpone. Let it cool to room temperature — not just warm — before combining.
  • The cocoa on top looks wet or sunken after chilling: It was dusted too early. Always sift the cocoa right before serving, not before the dessert goes into the fridge.

Leftovers and make-ahead

Tiramisu keeps well in the fridge, covered tightly, for up to three days — the flavor is actually at its best on day two. Beyond three days the ladyfingers start to break down and the cream can take on fridge odors. For make-ahead purposes, you can assemble the whole dish up to 24 hours before serving; just hold off on the cocoa dusting until right before it hits the table. Tiramisu can be frozen for up to one month — wrap the dish tightly in two layers of plastic wrap, then foil. Thaw it overnight in the refrigerator, not on the counter, and dust with fresh cocoa after thawing. The texture softens slightly after freezing but is still very good.

Ingredients
 
 

For the Mascarpone Cream Mixture:

  • 6 pieces egg yolks very fresh, room temperature
  • ¾ cup granulated sugar caster sugar preferred for smoother texture
  • 1 pound mascarpone cheese cold, best quality like BelGioioso
  • 1 ½ cups heavy whipping cream cold, 36% fat preferred

For the Espresso Soak & Assembly:

  • 1 ½ cups strong brewed espresso cooled to room temperature
  • 2 tbsp coffee liqueur such as Kahlúa or Tia Maria
  • 7 oz savoiardi (ladyfinger cookies) crisp and dry, not soft ladyfingers
  • 2 tbsp unsweetened cocoa powder preferably Dutch-process

Instructions
 

  • In a heatproof bowl over a saucepan of simmering water (double boiler style), whisk egg yolks and granulated sugar until mixture is pale and slightly thickened (about 6–8 minutes). Remove from heat and let cool.
  • In a separate large bowl, whisk the mascarpone until smooth. Gently fold the cooled egg yolk mixture into the mascarpone until fully combined, taking care not to deflate the texture.
  • In another chilled bowl, beat the heavy cream to stiff peaks using an electric hand mixer (about 3–4 minutes on medium-high). Fold whipped cream gently into the mascarpone mixture in three additions. The final texture should be airy and silky.
  • Combine cooled espresso and coffee liqueur in a shallow bowl. Quickly dip each savoiardi into the espresso mixture for 1–2 seconds per side. Do not let them become soggy.
  • In a 9x9 inch dish, line the base with half the dipped ladyfingers. Spread half of the mascarpone cream mixture over them and smooth with a spatula. Repeat with remaining ladyfingers and the rest of the cream.
  • Cover tightly and refrigerate for at least 6 hours or overnight for optimal flavor and texture development.
  • Right before serving, sift a generous layer of unsweetened cocoa powder over the top. Serve chilled.
