S’mores Bars (No-Bake, 20 Minutes, 4 Ingredients)

Four ingredients, one saucepan, no oven. These s’mores bars come together in about 20 minutes and are ready to cut after a 30-minute rest — which makes them genuinely useful when you need a dessert that’s done well before anyone arrives. The chocolate stays in soft pockets rather than melting into the mix, so every bar tastes like an actual s’more instead of a chocolate-flavored cereal block.

Before you start

Two things determine whether these bars turn out chewy and pocketed with chocolate or dense and uniform. First, keep the heat low the entire time you’re melting the butter and marshmallows — marshmallow scorches faster than you’d expect, and once it browns, the flavor carries through the whole batch. Second, timing matters when you add the chocolate chips: they go in after the pan is off the heat, and you stop stirring after three or four folds. The residual warmth softens them into ribbons without dissolving them. Pull the pan off the burner before you add anything else, and have your greased baking pan sitting right next to the stove — the mixture starts setting the moment it cools, so there’s no pausing once the cereal goes in.

Shopping notes

  • Golden Grahams cereal: The recipe calls for a full 10-oz box. Check that yours isn’t stale before you start — soft cereal means bars with no crunch. If you can’t find Golden Grahams, roughly broken honey graham crackers work, though the texture will be slightly denser.
  • Marshmallows: Standard-size marshmallows from a 10-oz bag melt evenly. Mini marshmallows also work and melt a little faster. Avoid marshmallow creme — the water content is different and the bars won’t set as firmly.
  • Chocolate chips: Milk chocolate is called for here. Semi-sweet chips give you a noticeably less sweet bar, which is a reasonable trade if the milk chocolate version feels too rich — skip the garnish of any extra chocolate drizzle on top, not worth the extra dish.

Keeping and reheating

Once fully cooled and cut, store the bars in an airtight container at room temperature for up to 3 days — stack them with parchment between layers so they don’t stick together. They hold their texture well at room temperature, so refrigerating isn’t necessary unless your kitchen runs very warm; cold does firm them up significantly and makes them chewier rather than soft. For longer storage, freeze individual bars wrapped tightly in plastic wrap and placed in a zip-top bag for up to 6 weeks. Thaw at room temperature for about 30 minutes. No reheating needed or recommended — heat softens them past the point where they hold together cleanly.

What can go wrong

  • Bars won’t hold their shape when cut: They needed more cooling time. If they’re still soft after 30 minutes at room temperature, refrigerate for 15–20 minutes before cutting. A warm kitchen slows the set considerably.
  • Mixture seized up before you finished pressing it into the pan: The marshmallow mixture cools and stiffens quickly. Next time, warm the pan slightly by rinsing it with hot water and drying it before greasing — a slightly warm pan buys you an extra minute or two of working time.
  • Bars are crumbly and fall apart: The cereal-to-marshmallow ratio was off, or the marshmallows didn’t fully melt before the cereal was added. Make sure the marshmallow mixture is completely smooth with no lumps before anything else goes in.
  • Chocolate chips fully melted into the mixture: The pan was still too hot when the chips were added, or they were stirred too many times. Let the pan sit off the heat for 60 seconds before folding in the chips, and stop after three or four turns.
  • Bars stuck to the pan and tore when lifted: The pan wasn’t greased thoroughly enough, or no parchment was used. Lining the pan with parchment that overhangs the sides lets you lift the whole slab out cleanly before cutting.

Ingredients
 
 

  • ½ cup unsalted butter (1 stick)
  • 10 ounce marshmallows (1 bag)
  • 12 ounce milk chocolate chips (1 bag)
  • 10 ounce Golden Grahams cereal (1 bag)

Instructions
 

  • Melt the butter in a large saucepan over low heat. Add the marshmallows and stir constantly with a silicone spatula until completely melted and smooth, about 3-4 minutes.
  • Remove the saucepan from the heat. Fold in the Golden Grahams cereal and stir gently until every piece is evenly coated. Add the chocolate chips and stir just until distributed — the residual heat will soften the chocolate into gooey pockets without fully melting them.
  • Immediately transfer the mixture into a greased 9x13 inch (33x23cm) baking pan. Press gently into an even layer using a spatula sprayed with cooking spray. Allow to cool at room temperature for at least 30 minutes before cutting into 12 bars.

Your questions, answered

Can I make these the night before?

Yes — these are actually better made the night before. They set completely overnight and cut cleanly with sharp edges. Store them covered at room temperature and they’ll be ready to serve the next day without any extra steps.

Can I double the recipe?

You can, but you’ll need a very large pot — at least 6 quarts — to fold in double the cereal without spilling. Use two 9×13 pans and have both greased and ready before you start cooking, since the mixture sets fast.

Do these need to be refrigerated?

No, they keep fine at room temperature for up to 3 days in an airtight container. Refrigerating them is fine but makes them noticeably firmer and chewier — some people prefer that texture, so it’s a matter of preference.

Can I use a different size pan?

A 9×13 inch pan is strongly recommended. A smaller pan makes the bars too thick and they won’t set evenly through the middle. If you only have a 9×9 pan, halve the recipe.

My store doesn’t have Golden Grahams — what else works?

Broken honey graham crackers are the closest substitute and give you the same flavor. Break them into roughly 1-inch pieces before adding. Any honey-flavored cereal with a similar crunch will also work, though the shape and texture of each bite will be slightly different.
