Pleah is a Cambodian beef salad built on a lime-and-fish-sauce dressing, blanched sirloin, and a pile of fresh herbs. The whole thing comes together in 25 minutes, and the ingredient list is shorter than most weeknight pasta dishes. If you want something light, punchy, and genuinely different from your usual dinner rotation, this is a good place to start.

Ingredient notes

  • Fish sauce: This is the ingredient most people hesitate over. It smells strong from the bottle, but it mellows completely in the dressing and provides the salty, savory backbone the salad needs. Look for it in the international aisle of most grocery stores or any Asian market. Red Boat and Tiparos are widely available and reliable.
  • Palm sugar: Sold in small discs or tubs at Asian grocery stores. If you can’t find it, light brown sugar works fine — use the same amount. The difference in flavor is subtle once everything is dressed.
  • Beef sirloin: Ask your butcher to slice it thin, or partially freeze the steak for 20 minutes at home before slicing — it firms up just enough to cut cleanly against the grain.
  • Fresh mint and cilantro: Both matter here. Don’t swap in dried herbs; the whole point of the salad is the fresh, green contrast against the acidic dressing. If someone at the table dislikes cilantro, flat-leaf parsley is a reasonable stand-in.

Why this recipe works

Two things make this salad work. First, the beef is blanched for just 30 seconds, which keeps it tender rather than chewy — overcooking is the main way this dish goes flat. Second, the dressing does double duty: the lime juice lightly firms the surface of the beef while the fish sauce and palm sugar pull the whole flavor profile into balance. Neither element works as well without the other. Get those two things right and the herbs and vegetables mostly take care of themselves.

What can go wrong

  • The beef turns rubbery: This happens when the slices are too thick or left in the boiling water too long. Aim for slices no thicker than ⅛ inch and pull them out at 30 seconds — they’ll finish gently as they cool.
  • The dressing tastes flat or one-note: Taste it before it goes on the beef. If it’s too sour, add a small pinch more sugar. If it’s too sweet, a few more drops of lime juice fixes it. Fish sauce brands vary in saltiness, so always taste first.
  • The herbs wilt before serving: Don’t toss the mint and cilantro in until you’re ready to eat. They go limp fast once they hit the acidic dressing — skip the garnish step of holding herbs back and just add everything right before serving.
  • The salad sits in liquid at the bottom of the bowl: Cucumber and tomatoes release water as they sit. Slice them just before assembling, and serve the salad immediately rather than letting it rest.
  • The peanuts go soft: Add the second half of the crushed peanuts right at the end, on top, not tossed in. That way they stay crunchy through the meal.

  • 1 lb beef sirloin, thinly sliced preferably grass-fed for best flavor

  • 1 clove garlic, minced

  • 1 tsp red chili, finely chopped adjust to heat preference

For the Herbs & Garnishes:

  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro, roughly chopped
  • ½ cup scallions, thinly sliced
  • ½ cup cucumber, thinly sliced adds cool freshness
  • ½ cup tomatoes, sliced for color and acidity

Instructions
 

  • In a mixing bowl, combine the lime juice, fish sauce, palm sugar, and minced garlic. Stir until the sugar dissolves.
  • Bring a saucepan of water to a boil, then blanch the thinly sliced beef for about 30 seconds until just cooked. Drain immediately and rinse under cold water to stop the cooking process.
  • Transfer the cooled beef to a large bowl. Add the thinly sliced shallots, chopped chili, and half of the crushed peanuts.
  • Pour the prepared lime dressing over the beef mixture and toss gently to coat.
  • Add the fresh mint, cilantro, and scallions, and lightly toss again to integrate the herbs evenly.
  • Serve immediately, garnished with the remaining crushed peanuts, cucumber slices, and tomatoes.
