This is a straightforward garlic butter shrimp Alfredo — fettuccine tossed in a Parmesan cream sauce with pan-seared shrimp, ready in 40 minutes. It uses a short ingredient list and one skillet for the sauce, which makes it genuinely useful on a busy weeknight. The result is rich without being fussy, and it reheats better than most cream pasta dishes if you handle it right.

What makes this version work

Two things matter here. First, the shrimp come out of the pan before the cream goes in. Leaving them in while the sauce reduces turns them rubbery — pulling them early and adding them back at the end keeps them tender. Second, the Parmesan has to be freshly grated, not the pre-shredded kind. Pre-shredded cheese is coated with starch to prevent clumping, and that starch makes the sauce grainy instead of smooth. Grate it yourself right before it goes into the pan and it melts cleanly into the cream.

Common problems and fixes

  • Sauce is too thick by the time you serve it: Cream sauces tighten fast off the heat. Keep a small cup of the pasta cooking water nearby and stir in a tablespoon or two just before serving to loosen it back up without diluting the flavor.
  • Sauce breaks and looks greasy: This usually happens if the heat is too high when you add the Parmesan. Take the pan off the burner entirely, add the cheese, and stir steadily. The residual heat is enough to melt it.
  • Shrimp are watery and the sauce gets thin: Frozen shrimp release a lot of liquid if they go into the pan still wet. Pat them completely dry with paper towels before they hit the butter.
  • Garlic tastes sharp or bitter: It burned. Garlic in butter over medium heat needs constant attention — 60 to 90 seconds is usually enough. If it starts to color at all, pull the pan off the heat immediately.
  • Pasta clumps after draining: If you drain the fettuccine and then leave it sitting while you finish the sauce, it sticks together. Toss it with a tiny bit of butter or keep it in a splash of pasta water until you’re ready to combine.

Make-ahead notes

Leftovers keep well in an airtight container in the fridge for up to 3 days — skip the garnish, it’s not worth the extra dish. To reheat, put the pasta in a skillet over low heat with a splash of water or milk (about 2 tablespoons per serving) and stir until the sauce comes back together; the microwave works too but tends to make the shrimp tough, so pull the shrimp out, reheat the pasta separately, then add the shrimp back for just the last 30 seconds. If you want to get ahead for the week, cook a double batch of pasta and sauce and store them together, then sear a fresh batch of shrimp on the night you serve it — shrimp take under 5 minutes and taste noticeably better fresh. The sauce alone (without shrimp or pasta) can be frozen for up to 6 weeks in a freezer-safe container; thaw it overnight in the fridge and reheat gently, whisking to bring it back together before adding freshly cooked pasta and shrimp.

  • 4 cloves garlic minced
  • 1 cup heavy cream 240ml, or double cream
  • 1 cup Parmesan cheese freshly grated, 100g
  • salt to taste
  • black pepper freshly ground, to taste
  • 2 tablespoons fresh parsley chopped, for garnish

Instructions
 

  • Bring a large pot of generously salted water to a rolling boil. Cook 450g (1 lb) fettuccine until al dente — about 2–3 minutes for fresh pasta or 10–12 minutes for dried, following package directions. Reserve ½ cup (120ml) of pasta water before draining.

  • In a large skillet, melt 2 tablespoons (30g) of unsalted butter over medium heat until it begins to froth slightly.

  • Add the minced garlic and sauté until fragrant, about 1 minute, stirring constantly so it does not brown.

  • Add the shrimp to the skillet in a single layer. Cook for 2–3 minutes per side until pink and opaque. Transfer the shrimp to a plate and set aside.

  • Reduce the heat to medium-low. Pour 1 cup (240ml) of heavy cream into the same skillet, scraping up any browned bits from the shrimp. Bring to a gentle simmer and stir in 1 cup (100g) of freshly grated Parmesan, stirring continuously until the cheese melts and the sauce is smooth, about 2 minutes. Season with salt and freshly ground black pepper to taste. If the sauce is too thick, add a splash of reserved pasta water to loosen it.

Can I use pre-cooked shrimp to save time?

You can, but the texture suffers. Pre-cooked shrimp are already fully done, so any additional heat makes them rubbery — if you use them, just stir them into the finished sauce for 30 seconds to warm through, nothing more.

Yes, and it scales up cleanly — just use a wider pan so the shrimp sear rather than steam. Store portions in individual airtight containers so you can reheat one serving at a time without repeatedly warming the whole batch.
