This is a quick pork noodle bowl seasoned with soy sauce, fish sauce, and brown sugar, finished with fresh coriander and lime. The honest reason to make it on a weeknight: the whole thing is done in about 50 minutes, uses one pan, and the ingredient list is short enough that nothing sits unused in the fridge. It’s filling, it’s fast, and it tastes noticeably better than it looks on paper.

What makes this version work

Two things actually move the needle here. First, the order of the sauce — soy, fish sauce, and brown sugar go in after the pork is fully browned, not before. Adding them too early steams the meat and washes out the fond on the pan, which is where most of the flavor lives. Let the pork get some color first, then deglaze with the sauce and let it reduce for those two minutes. Second, the lime juice and coriander go in off the heat. Heat kills the brightness of both almost immediately, so pulling the pan before you stir them in is the difference between a dish that tastes fresh and one that tastes flat.

Mistakes to avoid

  • Overcrowding the pan: A pound of pork mince needs room to brown. If your skillet is under 12 inches, cook the pork in two batches — otherwise it steams and turns gray instead of getting any color.
  • Adding the noodles cold and clumped: If your cooked egg noodles have been sitting, they’ll stick together and won’t coat evenly. Rinse them briefly under warm water and shake off the excess before they go into the pan.
  • Skipping the taste check before serving: Fish sauce and soy sauce vary a lot by brand in saltiness. Taste the finished dish before you plate it — a small squeeze of extra lime or a pinch of sugar can fix the balance in seconds.
  • Letting the bean sprouts cook too long: They only need 2–3 minutes in the pan. Any longer and they go limp and watery, which throws off the texture of the whole bowl.

Make-ahead notes

The pork mixture — cooked through and sauced, but without the noodles, spinach, or sprouts — keeps well in an airtight container in the fridge for up to 3 days. Store the noodles separately so they don’t absorb all the sauce and turn mushy. When you’re ready to eat, reheat the pork in a skillet over medium heat with a splash of water to loosen it, then toss in freshly cooked or rinsed noodles and the vegetables for the last 2–3 minutes. Skip the garnish of extra coriander on reheated portions — not worth the extra dish — and just add a fresh squeeze of lime straight into the bowl before serving. The pork mixture can also be frozen for up to 2 months; thaw overnight in the fridge before reheating.

  • 2 tablespoons vegetable oil Can substitute with sesame oil for a nutty flavor
  • 1 cup yellow onion finely chopped
  • 3 cloves garlic minced
  • 1 pound pork mince Preferably sourced from a local butcher
  • 3 tablespoons soy sauce Low sodium option recommended
  • 1 tablespoon fish sauce Adds umami depth
  • 1 tablespoon brown sugar For a touch of sweetness
  • 7 ounces egg noodles Cooked according to package instructions
  • 1 cup baby spinach Fresh and vibrant
  • 1 cup bean sprouts Rinsed and trimmed
  • 0.5 cup fresh coriander Chopped, plus extra for garnish
  • 1 tablespoon lime juice Freshly squeezed

Instructions
 

  • Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the finely chopped onion and minced garlic, and sauté until the onion is translucent and the garlic is fragrant, about 3 to 4 minutes.
  • Add the pork mince to the skillet, breaking it apart with a wooden spoon. Cook until it's browned and cooked through, approximately 6 to 8 minutes.
  • Stir in the soy sauce, fish sauce, and brown sugar. Let it simmer for approximately 2 minutes, allowing the flavors to meld and the sugar to dissolve.
  • Add the cooked egg noodles, baby spinach, and bean sprouts. Toss everything together until the spinach wilts and the noodles are evenly coated in the sauce, about 2 to 3 minutes.
  • Remove from heat and stir in the fresh coriander and lime juice for a burst of fresh flavor.
