This is a shrimp salad you can pull off on a weeknight — one pan, one bowl, about 30 minutes. The shrimp gets a quick chili-lime marinade, sears fast, and lands on top of crisp greens with avocado and a simple lime dressing. It’s filling enough to be dinner without feeling heavy.

What makes this version work

Two things matter here. First, the marinade does double duty — the same lime juice and honey that flavor the shrimp also form the base of the dressing, so the whole bowl tastes like one cohesive thing rather than a protein dropped onto a random salad. Second, the sear. A hot pan and a single layer of shrimp gives you a slightly caramelized crust in just 2–3 minutes per side. Crowd the pan and you get steam instead of char, and the honey in the marinade will burn before the shrimp cooks through. Get the pan properly hot before the shrimp goes in — that’s the one step worth paying attention to.

Troubleshooting

  • Shrimp turned rubbery: They overcooked. Shrimp go from done to tough in under a minute. Pull them off the heat as soon as they curl into a loose C-shape and turn opaque — a tight O-shape means they’re already overdone.
  • Watery salad by the time you serve it: The avocado and tomatoes release liquid once cut. Slice the avocado last and don’t dress the greens until right before serving — even five minutes of sitting makes a difference.
  • Marinade burning in the pan: The honey scorches if the heat is too high. Medium-high is the right setting; if your stove runs hot, dial it back slightly and make sure the pan isn’t preheating longer than a minute or two.
  • Dressing tastes flat: Lime juice varies a lot in acidity depending on the fruit. Taste the dressing before you pour it — if it needs brightness, add a little more lime juice; if it’s too sharp, a small pinch of extra salt usually balances it out better than more honey.
  • Shrimp sticking to the pan: The pan wasn’t hot enough when the shrimp went in, or the shrimp were still wet from the marinade. Pat them lightly with a paper towel before cooking — skip the garnish of extra cilantro on the side, not worth the extra dish — and let the pan heat fully before adding them.

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined preferably wild-caught
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp lime juice freshly squeezed
  • 1 tsp honey

For the Salad:

  • 4 cups mixed greens such as arugula, romaine, or baby spinach
  • 1 cup grape tomatoes, halved
  • ½ cup red onion, thinly sliced
  • 1 medium avocado, sliced
  • ¼ cup cilantro, chopped

For the Dressing:

  • 3 tbsp olive oil
  • 2 tbsp lime juice freshly squeezed
  • 1 tsp honey
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • In a mixing bowl, combine the shrimp, olive oil, chili powder, smoked paprika, garlic powder, salt, black pepper, lime juice, and honey. Toss to coat evenly and let marinate for at least 10 minutes.
  • Heat a grill pan or skillet over medium-high heat. Once hot, add the shrimp in a single layer and cook for 2-3 minutes per side until pink and slightly charred. Remove from heat and set aside.
  • In a small bowl, whisk together the olive oil, lime juice, honey, salt, and black pepper to make the dressing.
  • In a large salad bowl, toss the mixed greens, grape tomatoes, red onion, and cilantro with the dressing.
  • Top the salad with the grilled shrimp and avocado slices. Serve immediately.

Can I use frozen shrimp?

Yes — thaw them completely in cold water first, then pat them dry before marinating. Frozen shrimp often hold extra moisture, and wet shrimp won’t sear properly.

How far ahead can I marinate the shrimp?

Stick to 10–30 minutes. The lime juice starts to chemically cook the shrimp if it sits much longer, and you’ll end up with a mushy texture before the pan even heats up.

Can I make this without a grill pan — just a regular skillet?
