Spiced Apple Rum Cocktail

This is a five-minute shaken cocktail built from cinnamon liqueur, spiced rum, apple juice, and a squeeze of lemon. It tastes like apple pie filling in a glass — warm spice, tart fruit, nothing complicated. If you have a martini shaker and a highball glass, you’re already most of the way there.

The technique that matters

Shaking matters here more than it might seem. The ice doesn’t just chill the drink — it dilutes it slightly, which softens the edge of the alcohol and lets the apple and cinnamon flavors come through more clearly. Shake hard for a full 10 to 15 seconds. A half-hearted shake leaves the drink too sharp and not cold enough. The other thing worth getting right is the order you add ingredients to the shaker: liquids first, then ice on top. That way the ice doesn’t block the pour and you get an even mix from the start.

If something goes sideways

  • The drink tastes too sweet: The cinnamon liqueur (especially Fireball) is already quite sweet. Add a few more drops of lemon juice to cut through it — start with just a few drops at a time so you don’t overcorrect.
  • The drink tastes too boozy or harsh: Your ratio of juice to spirits may be off. Add another half-ounce of apple juice and reshake with fresh ice. Freshly pressed or cloudy apple juice works better here than a thin, watery variety.
  • The cinnamon clumps on top instead of mixing in: Ground cinnamon doesn’t dissolve in cold liquid. Add it to the shaker before the ice so it gets agitated into the drink rather than floating on the surface.
  • The drink is watery by the time you finish it: Your ice may have been partially melted before you started. Use ice straight from the freezer and drink it promptly — this one doesn’t hold well once poured.
  • The shaker is leaking or hard to open: Metal shakers can seal very tightly when cold. Wrap a kitchen towel around the joint and give it a firm twist rather than pulling straight apart.

About the ingredients

  • Cinnamon liqueur: Fireball is the most common option and works well, but any cinnamon schnapps or cinnamon whiskey liqueur will do the same job. The flavor profile stays consistent across brands.
  • Spiced rum: Captain Morgan is the standard call here. Spiced rum already has vanilla and warm spice notes baked in, which is why it pairs so naturally with apple. A plain white rum will work in a pinch but the drink will taste thinner.
  • Apple juice: Use a good-quality, full-flavored apple juice — not a diluted juice drink. Cloudy apple juice gives a slightly richer result. Fresh-pressed is even better if you have it.
  • Lemon juice: Fresh squeezed is worth it. Bottled lemon juice can taste flat and slightly chemical in a cold drink where there’s no heat to mask it. Skip the garnish — not worth the extra dish.

Leftovers and make-ahead

This cocktail doesn’t store once made — the ice dilutes it and the carbonation (if you add any) goes flat fast. What you can do ahead is pre-measure and combine the cinnamon liqueur, spiced rum, and apple juice in a small jar or pitcher and keep it in the fridge for up to two days. When you’re ready to serve, just pour the mix into a shaker with fresh ice, add the lemon juice, and shake. That makes it easy to put together quickly if you’re making a round for a few people at once.

  • Cocktail shaker (Boston or cobbler style)
  • Hawthorne strainer or built-in shaker strainer
  • Jigger or small measuring cup (1 oz / 30ml)
  • highball glass
  • Citrus juicer or reamer

Ingredients
  

  • 1 oz cinnamon liqueur 30ml, such as Fireball
  • 1 oz spiced rum 30ml, such as Captain Morgan
  • ¼ oz fresh lemon juice 7.5ml
  • 2 oz apple juice 60ml
  • 1 pinch ground cinnamon for garnish
  • ¼ small apple thinly sliced, for garnish, about 1 oz / 30g
  • ice enough to fill shaker to the liquid line

Instructions
 

  • Add the cinnamon liqueur, spiced rum, lemon juice, and apple juice to a cocktail shaker. Fill with ice to just above the liquid line. Seal the shaker tightly and shake vigorously for 10-15 seconds until the outside of the shaker feels very cold.

  • Strain into a highball glass filled with fresh ice. Garnish with thin apple slices fanned along the rim and a light sprinkle of ground cinnamon on top.

Notes

Storage: Serve immediately once shaken — the ice dilution and chill deteriorate within minutes. Do not store a finished cocktail.
Make-ahead: Pre-batch the cinnamon liqueur, spiced rum, and apple juice in a sealed jar or pitcher. Refrigerate for up to 2 days. Add lemon juice and shake with fresh ice to order.
Substitution: Replace cinnamon liqueur with 1 tablespoon cinnamon simple syrup plus an extra ½ oz spiced rum if you prefer to skip Fireball-style liqueurs. Lime juice works in place of lemon for a slightly different citrus note.
Non-alcoholic version: Replace spiced rum with additional apple juice and use cinnamon simple syrup instead of cinnamon liqueur for a spiced apple cooler.
Pro tip: Shake hard for a full 10–15 seconds. The outside of the shaker should feel ice-cold to the touch — that slight dilution is what balances the sweetness and spice.

Can I make a non-alcoholic version for kids?

Yes — replace the spiced rum with extra apple juice and use a cinnamon simple syrup in place of the cinnamon liqueur. The result is a spiced apple cooler that has the same flavor profile without any alcohol.

Do I need a martini shaker, or can I use something else?

Any lidded container that seals tightly will work — a mason jar with a lid is the most common substitute. Just make sure it’s full enough that the liquid actually moves around when you shake it.

Can I make a big batch for a party?

You can scale up the liquids and mix them in a pitcher ahead of time, but don’t add ice to the pitcher — it will dilute the whole batch. Shake individual servings over ice as you pour them, or serve over a large ice block in a punch bowl.

What can I use instead of a highball glass?

Any tall glass works fine. A rocks glass or even a wide-mouthed mason jar is perfectly practical — the glass shape doesn’t affect the flavor.

Is there a way to make this a warm drink?

Yes. Skip the shaker and ice, and gently warm the apple juice on the stove before combining everything in a mug. Don’t boil it — you just want it hot enough to be comforting, around 150°F, so the alcohol doesn’t cook off entirely.

My apple juice is very sweet already — will the drink be too sugary?

It can be, since the cinnamon liqueur adds significant sweetness on its own. Use a tart or less-sweet apple juice variety, and lean on the lemon juice to keep the drink balanced.
