This is a baked miso tofu salad with a tahini-sesame dressing — firm tofu pressed, marinated in white miso, soy sauce, mirin, and sesame oil, then roasted until golden, served over mixed greens with julienned carrot and sliced cucumber. The honest reason to make it: it comes together in under an hour, scales easily, and holds up well when you’re feeding more than two people without turning into a last-minute scramble.

Substitutions that actually work

  • White miso: If you only have red or yellow miso, use half the amount — both are saltier and more intense than white miso, and the tofu can turn bitter if you overdo it.
  • Mirin: A teaspoon of honey or maple syrup stirred into the marinade works fine. Dry sherry is a closer match if you have it.
  • Tahini: Natural peanut butter (unsweetened) makes a richer, slightly different dressing but holds together well and most people enjoy it just as much.
  • Rice vinegar: Plain white wine vinegar works. Apple cider vinegar adds a little more sweetness — not a problem here.
  • Mixed greens: Shredded napa cabbage or thinly sliced romaine both hold up better if the salad is sitting out for a while, which matters when you’re serving a group.

Why this recipe works

Two things actually drive the result here. First, pressing the tofu before marinating isn’t optional — water-logged tofu sits in the marinade rather than absorbing it, and you end up with bland centers and soggy edges after baking. Even 15 minutes under a heavy pan makes a real difference. Second, white miso caramelizes quickly in a hot oven, which is why the recipe uses a relatively short bake time at 400°F. Go longer and the sugars in the miso burn before the tofu firms up. Pull the tofu when it looks golden and just starting to catch at the edges — that’s the window.

What can go wrong

  • Tofu sticks to the baking tray: Parchment paper is non-negotiable here. Foil alone isn’t enough — the miso sugars bond to it and the tofu tears when you try to flip or remove it.
  • Dressing seizes up and turns thick: Tahini thickens fast once it hits acid. If your dressing looks like paste, add water a teaspoon at a time and whisk again — it loosens back up easily.
  • Salad goes watery before serving: Don’t dress the greens until right before eating. The cucumber in particular releases a lot of liquid once salt or acid hits it. If you’re making this for guests, keep the dressing separate and let people add their own.
  • Marinade slides off the tofu: This usually means the tofu surface is still damp. Pat each piece dry with a paper towel right before coating — the marinade clings much better to a dry surface.
  • Tofu tastes flat after baking: The marinade is only on the outside. If you cut the tofu into very large slabs, the inside stays bland. Cubes or slices no thicker than ¾ inch give the miso flavor a fighting chance — skip the thick steakhouse-style cuts.

Make-ahead notes

The tofu can be marinated up to 24 hours ahead in the fridge — longer than that and the salt in the miso starts to draw out moisture and toughen the texture. Baked tofu keeps well for up to 3 days in an airtight container in the fridge; reheat it in a dry skillet over medium heat for 2–3 minutes per side to bring back some of the exterior texture, since the oven tends to make it rubbery on reheating. The sesame dressing keeps for up to 5 days refrigerated — it will thicken, so whisk in a splash of water before using. Prep the vegetables and store them separately; assembled salad does not keep overnight.

  • 1 block firm tofu around 200g, pressed to remove excess moisture

For the Sesame Dressing:

  • 2 tbsp tahini smooth and rich for creamy texture
  • 1 tbsp rice vinegar balances the richness
  • 1 tbsp soy sauce
  • 1 tsp honey or maple syrup for a vegan option
  • 1 tbsp water to adjust consistency
  • 1 tsp grated ginger freshly grated for an aromatic kick

For the Salad:

  • 2 cups mixed greens arugula, baby spinach, or mizuna
  • ½ cup carrot julienned or shredded
  • ½ cup cucumber thinly sliced
  • 1 tbsp sesame seeds toasted for extra nuttiness

Instructions
 

  • Prepare the Tofu: Press the tofu for at least 15 minutes to remove excess moisture. Cut into thick slices or cubes.
  • Make the Marinade: In a mixing bowl, whisk together miso paste, soy sauce, mirin, and sesame oil until well combined.
  • Marinate the Tofu: Coat the tofu with the miso marinade and let it rest for at least 20 minutes (or overnight for deeper flavor).
  • Bake the Tofu: Preheat the oven to 200°C (400°F). Place the marinated tofu on a lined baking tray and bake for 12–15 minutes until golden and slightly caramelized.
  • Make the Sesame Dressing: In a small bowl, whisk together tahini, rice vinegar, soy sauce, honey (or maple syrup), water, and grated ginger until smooth.
  • Assemble the Salad: Arrange the mixed greens, julienned carrots, and sliced cucumber in a bowl. Place the baked tofu on top.
  • Finish and Serve: Drizzle the sesame dressing over the salad and garnish with toasted sesame seeds. Serve immediately.

Yes — this recipe scales up without any technique changes. Use two baking trays instead of crowding everything onto one, because packed tofu steams rather than roasts and you lose the caramelized exterior.

Do I have to bake the tofu, or can I cook it another way?

Pan-frying works and gives you a crispier crust. Use a non-stick or cast iron pan over medium-high heat with a small amount of neutral oil, about 3–4 minutes per side, watching closely because the miso burns faster on direct heat than in the oven.

Is this recipe vegan?

It is if you swap the honey for maple syrup in the dressing — that’s the only non-vegan ingredient. Everything else in both the marinade and the salad is already plant-based.

Where do I find white miso paste?

Most large grocery stores carry it in the refrigerated section near tofu or in the international foods aisle. Asian grocery stores stock it reliably and usually at a lower price — a tub keeps in the fridge for several months.

Can I use silken or soft tofu instead of firm?

No — silken and soft tofu will fall apart during pressing and baking. Firm or extra-firm tofu is the right call here; extra-firm actually holds up even better if you want cleaner cubes after baking.
