Royal icing is four cups of powdered sugar, three egg whites, a splash of lemon juice, and vanilla — that’s it. It dries hard and smooth, which means your decorated cookies won’t smear when you stack or bag them. That’s the real reason to use it over buttercream for cut-out cookies.

The technique that matters

The single thing that makes or breaks royal icing is how long you beat it. You need stiff, glossy peaks — the kind where the icing holds a sharp point and doesn’t slump. Under-beaten icing looks dull and won’t pipe cleanly; over-beaten icing gets grainy and can crack badly when it dries. Beat on medium-high for the full 4–5 minutes after all the sugar is in. The other technique worth knowing is consistency adjustment. Stiff icing (straight from the mixer) is for piping outlines and details. For flooding — filling in large areas smoothly — thin it with water, just a few drops at a time, until a ribbon of icing dropped back into the bowl disappears in about 10 seconds. Those are two different consistencies, and trying to do both jobs with one batch rarely works well.

Ingredient notes

  • Confectioners’ sugar: Sift it even if the bag says pre-sifted. Lumps will clog a piping tip and leave bumps in flooded surfaces.
  • Lemon juice: Fresh squeezed is worth it here. Bottled lemon juice can have additives that slightly affect how the icing sets.
  • Vanilla extract: Pure extract keeps the icing bright white. Imitation vanilla is often clear and works fine if white color matters to you — skip the pure extract — not worth the extra dish of deliberation.
  • Aquafaba (vegan swap): Use 3 tablespoons per egg white. Open the can, drain into a bowl, and use it straight — no extra prep needed.

Troubleshooting

  • Icing is too stiff to pipe smoothly: Your kitchen may be dry or the sugar was packed. Add water one drop at a time and stir by hand — the mixer will incorporate too much air at this stage.
  • Icing won’t dry hard after several hours: Humidity is usually the culprit. Run a fan near the cookies or move them somewhere with better airflow. High-humidity days can push drying time past 8 hours.
  • Colors bleed into each other: You applied the second color before the first was fully set. Let each flooded section dry at least 30–45 minutes before adding an adjacent color.
  • Icing has a rough, grainy surface after drying: The sugar wasn’t fully dissolved during mixing, or the icing was beaten too long and air bubbles formed. Tap freshly flooded cookies gently on the counter right after decorating to pop surface bubbles.
  • Piping bag tip keeps clogging: The icing has started to crust inside the bag. Keep a damp paper towel over the tip between uses, and if it clogs mid-session, push the dried bit out with a toothpick rather than squeezing harder.

Storage and reheating

Royal icing doesn’t reheat, but it stores well. Press plastic wrap directly onto the surface of the icing — not just over the bowl — before sealing, and it will keep in the fridge for up to 3 days. Before using refrigerated icing, let it come to room temperature for about 20 minutes, then stir it well by hand. It will look separated or weepy at first; keep stirring and it comes back together. You can also freeze royal icing in an airtight container for up to a month. Thaw overnight in the fridge, then bring to room temperature and stir before use. Fully decorated and dried cookies keep at room temperature in an airtight container for up to a week — no refrigeration needed once the icing has set completely.

  • 4 cups confectioners' sugar sifted; use pure cane sugar for best texture
  • 3 large egg, whites or use pasteurized egg whites from a carton if concerned about raw eggs
  • ½ teaspoon fresh lemon juice adds brightness and stabilizes the icing
  • 1 teaspoon vanilla extract pure extract recommended

Instructions
 

  • In a clean, dry mixing bowl, combine the egg whites and lemon juice. Using a stand mixer with a whisk attachment or a hand mixer, beat on medium speed until the mixture is frothy and light, about 30–60 seconds.
  • Add the sifted confectioners' sugar one cup at a time while mixing on low speed to prevent it from puffing up. Once all the sugar is added, increase the speed to medium-high and beat until stiff, glossy peaks form, about 4–5 minutes. The icing should hold its shape well and have a pearly sheen.
  • Mix in the vanilla extract until just combined. If needed, adjust the consistency by adding a few drops of water to thin for flood icing, or a bit more confectioners' sugar to thicken for piping work.
  • Use immediately or store in an airtight container. If storing, place a piece of plastic wrap directly on the surface of the icing to prevent crusting. Stir well before using again.

Notes

  • For a vegan version, substitute 3 tablespoons of aquafaba (liquid from canned chickpeas) for each egg white.
  • To create colored icing, divide the batch and mix in gel food coloring—avoid liquid food coloring, as it can thin out the icing.
  • Wrap unused piping bags with a damp paper towel and plastic wrap to prevent the tips from hardening.

Is it safe to eat royal icing made with raw egg whites?

For most healthy adults it’s fine, but if you’re serving young children, pregnant guests, or anyone immunocompromised, use pasteurized egg whites from a carton instead. They behave almost identically in this recipe and remove the raw egg concern entirely.

Can I make royal icing without a stand mixer?

Yes — a hand mixer works well. Plan for the same 4–5 minutes of beating time on medium-high; just make sure your bowl is deep enough that the sugar doesn’t puff out when you first add it.

Why does my royal icing dry dull instead of shiny?
