These honey garlic pork chops come together in 35 minutes with a short list of pantry staples — honey, soy sauce, garlic, and a splash of apple cider vinegar. The glaze goes sticky and glossy in the pan, and the chops finish in the oven so the inside stays juicy. It’s the kind of weeknight dinner that looks like you tried harder than you did.

Before you start

Two things make or break this recipe. First, pat the pork chops completely dry before they hit the pan — any surface moisture will steam the meat instead of searing it, and you’ll lose that golden crust the glaze needs to cling to. Second, watch the heat when you add the honey garlic sauce. Honey burns fast over high heat, so drop to medium-low before pouring it in. Keep spooning the sauce over the chops as it thickens; that basting step is what builds the sticky coating rather than a thin, runny sauce.

Ingredient notes

  • Honey: Any liquid honey works fine here. Raw or local honey is a nice touch if you have it, but standard grocery-store honey produces a great glaze. Avoid thick creamed honey — it doesn’t melt evenly in the sauce.
  • Soy sauce: Low-sodium keeps the saltiness in check, which matters especially if you’re serving kids. Regular soy sauce will work but taste the sauce before adding any extra seasoning.
  • Apple cider vinegar: This is what keeps the glaze from tasting one-note sweet. Don’t skip it — but if you’re out, rice vinegar is the closest swap.
  • Bone-in pork chops, 1-inch thick: Thinner chops will overcook quickly; if yours are under ¾ inch, reduce the oven time to 5 minutes and check early.

Make-ahead notes

Cooked chops keep well in an airtight container in the fridge for up to 3 days. Reheat them in a covered skillet over low heat with a splash of water to loosen the glaze — the microwave works in a pinch but can toughen the meat. You can also freeze the cooked chops for up to 2 months; thaw overnight in the fridge before reheating. If you want to get ahead on prep, mix the honey garlic sauce up to 3 days in advance and store it in a jar in the fridge.

If something goes sideways

  • The glaze is burning in the pan: The heat is too high. Pull the pan off the burner for 30 seconds, then continue on medium-low. A little dark color on the edges is fine; black and acrid means start the sauce over — it’s only four ingredients.
  • The sauce isn’t thickening: Keep basting and give it another minute or two. If it’s still very thin after 7 minutes, the heat may be too low — nudge it up slightly and keep spooning.
  • The chops are cooked through but the glaze looks pale: Skip the garnish — not worth the extra dish. Instead, turn on the broiler for the last 2 minutes of oven time to deepen the color quickly. Watch it closely; honey catches fast under a broiler.
  • The meat is tough and dry: Bone-in chops at 1 inch thick are forgiving, but overcooking is the usual culprit. Pull them from the oven as soon as the internal temperature hits 145°F and don’t skip the 5-minute rest — that rest is doing real work.
  • The garlic tastes sharp or raw: Mince it finely so it cooks through during the basting stage. If you have pieces that are too chunky, they won’t soften in time and can taste harsh, especially for kids.

  • ¼ cup honey 85g, preferably local raw honey for best flavour
  • 3 cloves garlic finely minced
  • 2 tablespoons soy sauce low-sodium
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon black pepper freshly ground
  • 1 tablespoon olive oil regular/light — not extra-virgin, which smokes at searing temperatures
  • 1 tablespoon butter unsalted, 14g

Instructions
 

  • Preheat your oven to 350°F / 180°C (160°C fan-forced). Pat the pork chops completely dry with paper towels on both sides — this is essential for a good sear.

  • In a small bowl, combine honey, minced garlic, soy sauce, and apple cider vinegar. Stir well to mix the flavors.
