This is a straightforward funnel cake made from pantry staples — flour, eggs, milk, and a little sugar — fried in hot oil and dusted with powdered sugar. The whole thing takes about 40 minutes, and kids genuinely love watching the batter hit the oil. It’s one of those recipes that feels like a special occasion without requiring a special trip to the store.

Before you start

Oil temperature is the one thing that determines whether your funnel cake is crispy or greasy. Get the oil to 375°F before you pour a single drop of batter, and keep a thermometer clipped to the pot the whole time — the temperature drops every time you add batter and climbs back up between batches. The other thing worth doing is resting the batter for the full 5–10 minutes before you start frying. It thickens slightly as it sits, which gives you more control when you’re swirling it into the oil, especially if kids are helping direct the pour.

What can go wrong

  • The batter sinks and clumps instead of spreading: The oil isn’t hot enough. Clumpy batter that sinks to the bottom means the temperature has dropped below 350°F. Let the oil recover fully between cakes.
  • The cake falls apart when you flip it: You flipped too early. Wait until the edges look set and golden — usually the full 1–2 minutes — before attempting to turn it. A wide, flat spatula used alongside tongs gives you better control than tongs alone.
  • The batter won’t flow through the squeeze bottle: It’s too thick. Add milk one tablespoon at a time and stir until it flows easily. Batter that stalls mid-pour creates uneven, dense patches rather than a lacy pattern.
  • The finished cake is soggy in the middle: The cake was too thick when poured, or the oil temperature was too low. Keep your swirling pattern open and overlapping rather than piling batter in the center.
  • Powdered sugar melts into a sticky paste: The cake wasn’t drained long enough on paper towels, or it was dusted while steam was still rising. Give it 30–60 seconds on the towels before dusting — skip the garnish right out of the oil, it’s not worth the soggy result.

Smart swaps

  • Whole milk: The recipe calls for whole milk for good reason — it gives the batter a slightly richer texture. That said, 2% works fine. Oat milk is the most reliable non-dairy substitute here because its consistency is closest to whole milk; thinner milks like rice milk can make the batter too runny.
  • Squeeze bottle: A standard ketchup bottle works perfectly. If you’re using a zip-lock bag, cut the corner small — about ¼ inch — or the batter comes out too fast to control the pattern.
  • Vegetable oil: Any neutral high-smoke-point oil works: canola, sunflower, or refined coconut oil. Avoid olive oil or butter — they’ll burn at 375°F.

Storage and reheating

Funnel cake is at its best the moment it comes out of the oil. If you have leftovers, let them cool completely, then store in a single layer in an airtight container at room temperature for up to one day — stacking causes sogginess. To reheat, use an oven or toaster oven at 375°F for 5–7 minutes; it won’t be quite as crispy as fresh, but it’s far better than the microwave, which turns the cake soft and chewy. Freezing is not recommended — the texture doesn’t survive it.

  • 4 cups vegetable oil or enough for 2 inches depth in pan

For Serving:

  • ½ cup powdered sugar for dusting

Instructions
 

  • In a mixing bowl, whisk together the flour, baking powder, salt, and sugar.
  • In another bowl, beat the eggs, milk, and vanilla extract. Gradually add the wet ingredients to the dry, whisking until you have a smooth, lump-free batter—slightly thicker than pancake batter.
  • Let the batter rest for 5–10 minutes to relax the gluten. Meanwhile, heat the oil in a large heavy-bottomed pot or deep fryer to 375°F (190°C).
  • Pour the batter into a squeeze bottle or funnel with a finger stopper. Holding the bottle close to the hot oil, squeeze in a swirling, overlapping circular pattern to form a lacy cake 5–6 inches wide.
  • Fry 1–2 minutes per side until golden brown. Flip carefully using tongs. Transfer to a plate lined with paper towels to drain excess oil.
  • Immediately dust with powdered sugar and serve warm.
