This parfait is built around one idea: do the work the night before so breakfast is already done when you open the fridge. Rolled oats and chia seeds soak overnight in whole-milk yogurt, mashed banana, and almond milk, thickening into a creamy, layered breakfast that holds its structure for hours. At 470 calories and 16g of protein per jar, it’s a genuinely filling meal — not a snack dressed up as one.

The technique that matters

The key move here is getting the liquid ratio right before you refrigerate. The chia seeds and rolled oats both absorb moisture overnight, so the mixture needs to go into the fridge looking slightly looser than you want it to finish. That’s exactly what the 2 tablespoons of almond milk are doing — they give the chia seeds enough liquid to swell fully without pulling moisture from the yogurt and leaving the base dry or gummy by morning. The second thing worth doing carefully is mashing the banana until it’s nearly a paste. Banana oxidizes overnight, and any large chunks will turn brown and create streaky, grey patches through the yogurt layer. Smooth mash blends in and stays invisible.

Ingredient notes

  • Chia seeds: These are doing structural work, not just adding nutrition. Don’t reduce the amount or skip them — without them, the oat layer stays loose and the parfait won’t hold its layers when you spoon into it.
  • Whole-milk yogurt: The fat content is what gives the base its thick, almost custard-like texture after soaking. Low-fat or non-fat yogurt produces a noticeably thinner, slightly watery result.
  • Stevia: Fully optional. If you’re using frozen berries, they tend to be sweeter than fresh once thawed, so taste the oat mixture before adding any sweetener at all. Honey or maple syrup work as direct swaps at the same quantity.
  • Frozen berries: A practical choice for batch prep — they’re consistent year-round and release a little juice overnight that soaks into the oat layers. Thaw them in the fridge, not on the counter, so they don’t make the bottom layer watery.

If something goes sideways

  • The mixture is still runny after 8 hours: Your chia seeds may be old. Chia seeds lose their gelling ability over time. Test a teaspoon in water — it should form a gel within 10 minutes. Replace the bag if it doesn’t.
  • The oats taste raw or chalky: This usually means the jar was stored somewhere too cold, like the back of a very cold fridge. Move it to a middle shelf where the temperature is more consistent, or extend the soak to the full 12 hours.
  • The layers have merged into one uniform mixture: The vessel is likely too wide. A wide bowl or short container lets everything spread and sink together. Use a tall, narrow jar — a standard wide-mouth pint mason jar works well — so the layers stay stacked.
  • The banana flavor is too strong by morning: Use a less ripe banana next time. The riper the banana, the more pronounced the flavor becomes after an overnight soak. A just-yellow banana with no brown spots is the right stage for this recipe.
  • The almonds have gone soft: Skip the garnish — not worth the extra dish. Add the chopped almonds right before eating instead of layering them in the night before, and they’ll stay crisp.

Keeping and reheating

Assembled parfaits keep well in the fridge for up to 3 days in a sealed jar, which makes this genuinely useful for batch prep — assemble three or four jars on Sunday night and breakfast is handled through Wednesday. The texture is best between hours 8 and 24; after 48 hours the oats continue to absorb moisture and the base gets denser, though it’s still perfectly edible. Add fresh berries to the top layer of any jar you’re planning to eat on day 3, since berries stored at the bottom for multiple days can get quite soft. This recipe doesn’t freeze well — the yogurt separates on thawing and the texture turns grainy. Eat it cold, straight from the fridge; reheating isn’t needed and would break down the layers.

Ingredients
 
 

  • ¾ cup yogurt plain whole milk
  • ⅓ cup rolled oats uncooked
  • 1 teaspoon chia seeds
  • 1 tablespoon granulated Stevia sweetener optional, or to taste
  • ½ teaspoon cinnamon
  • ¼ teaspoon vanilla extract
  • ¼ large banana mashed
  • 2 tablespoons almond milk unsweetened
  • 1 cup mixed berries fresh or frozen
  • 2 tablespoons almonds chopped

Instructions
 

  • In a medium bowl, mash the banana with a fork until mostly smooth. Add the yogurt, rolled oats, chia seeds, cinnamon, vanilla extract, and almond milk. Stir until evenly combined. Be sure to add the full amount of almond milk — the chia seeds will absorb the moisture overnight and thicken the mixture. Taste and stir in Stevia or another sweetener if desired.
  • In a tall glass, mason jar, or to-go container, add a layer of mixed berries on the bottom. Spoon half of the yogurt-oat mixture on top, then sprinkle with half the chopped almonds. Repeat with another layer of berries, the remaining yogurt mixture, and the rest of the almonds. Finish with a few berries on top.
  • Cover tightly and refrigerate for at least 6 hours or overnight (up to 12 hours). The oats and chia seeds will absorb the liquid and create a thick, creamy texture. Enjoy straight from the fridge — no reheating needed.

No — instant oats will turn to mush overnight and the texture becomes unpleasant. Rolled oats absorb liquid gradually and hold their shape; instant oats are pre-cooked and break down too fast in a long soak.

Can I make this dairy-free?
