This homemade pepperoni pizza is the recipe that finally stopped me ordering delivery on Friday nights. A store-bought dough gets pre-baked on a screaming-hot baking sheet until the bottom is shatteringly crispy, then loaded with marinara, sautéed cremini mushrooms, two cheeses, and sliced turkey pepperoni before a final bake that melts everything together perfectly.

What makes this version stand out is the technique: sautéing the mushrooms first drives off all that excess moisture so your crust stays crisp rather than soggy. The two-stage bake — first on the bottom rack for a golden base, then moved to the middle rack for an even cheese melt — gives you results that rival a pizzeria without a pizza stone or any special equipment.

Pepperoni pizza is one of my go-to pizza flavours. I think they are simple, yet they give this very distinct flavour that you will keep craving for. Fortunately, I can now make a homemade one at home with this recipe.

Ingredients
 
 

  • as needed cooking spray for greasing skillet
  • 2 cups cremini mushrooms thinly sliced
  • 1 lb pizza dough store-bought, at room temperature
  • 2 teaspoons olive oil for brushing dough
  • 1 cup marinara sauce
  • 1 ½ cups mozzarella cheese shredded
  • 2 tablespoons parmesan cheese freshly grated
  • 2 ounces turkey pepperoni sliced

Instructions
 

  • Position one oven rack in the lowest setting and another in the middle setting. Place a rimless baking sheet on the bottom rack and preheat the oven to 500°F / 260°C (240°C fan-forced). Allow at least 15–20 minutes for the baking sheet to fully preheat.
  • Add the sliced mushrooms to a skillet coated with cooking spray and sauté for 5–6 minutes over medium-high heat, stirring occasionally, until the moisture has fully evaporated and the mushrooms are lightly golden. Transfer to a plate and set aside.
  • On a lightly floured surface, stretch or roll the pizza dough into a roughly 12-inch (30cm) round or oval. Brush the top lightly with olive oil.
  • Carefully remove the preheated baking sheet from the oven using oven mitts. Quickly slide the oiled dough onto the hot baking sheet using a large spatula or pizza peel. Work fast — the pan is extremely hot.
  • Bake on the lowest oven rack at 500°F / 260°C for 8 minutes until the bottom is set and just starting to turn golden. Remove from the oven.
  • Spread the marinara sauce in an even layer over the par-baked crust, leaving a ¼-inch (0.5cm) border around the edges.
  • Scatter the sautéed mushrooms evenly over the sauce, then sprinkle the shredded mozzarella and grated Parmesan over the mushrooms.
  • Arrange the turkey pepperoni slices in an even layer on top of the cheese. Return the pizza to the oven on the middle rack and bake for an additional 8–10 minutes at 500°F / 260°C until the crust is deep golden brown, the cheese is bubbling, and the pepperoni edges are slightly crisped. Let the pizza rest on a wire rack for 2–3 minutes before slicing.

  • Wire cooling rack (nice-to-have) — resting the finished pizza on a rack for 2 minutes before slicing lets steam escape from the bottom so the crust stays crispy rather than going soft on the cutting board.

Tips for Best Results

  • Bring the dough to room temperature. Cold dough is elastic and fights back when you try to stretch it. Pull it from the fridge 30–45 minutes before you plan to shape it. It should feel soft and pliable.
  • Do not skip the baking sheet preheat. The entire crust texture depends on that initial contact with a ripping-hot surface. Set a timer for 20 minutes after your oven reaches 500°F to make sure the sheet is fully heated through.
  • Squeeze every drop of moisture from the mushrooms. When sautéing, resist the urge to stir constantly — let the mushrooms sit in contact with the hot pan so they brown rather than steam. They are done when they look shrunken, golden, and dry.
  • Spread the sauce thinly. A thick sauce layer creates a moisture barrier between crust and toppings. You want a thin, even coating — about 1 cup is plenty for a 12-inch pizza.
  • Watch the pepperoni in the final bake. Turkey pepperoni is leaner than pork and can dry out quickly at 500°F. Pull the pizza as soon as the cheese is bubbling and the pepperoni edges are just starting to curl and crisp — about 8–10 minutes.

Substitutions and Variations

  • Regular pepperoni: Swap the turkey pepperoni for standard pork pepperoni if you prefer a richer, fattier flavour. The small cups of rendered fat that form on pork pepperoni are a feature, not a bug.
  • Mushroom swap: No cremini mushrooms? White button mushrooms work identically. For a more intense flavour, use a mix of shiitake and cremini.
  • Cheese variations: Replace half the mozzarella with provolone for a sharper, more complex cheese pull. A sprinkle of pecorino romano instead of Parmesan adds a saltier, tangier bite.
  • Spicy version: Add ¼ teaspoon of red pepper flakes to the marinara sauce or drizzle hot honey over the finished pizza for a sweet-heat contrast.
  • Meat-free option: Drop the pepperoni entirely and add roasted red peppers and sliced black olives for a vegetarian version with the same bold, savoury character.
  • Dough alternatives: Naan bread or pre-baked flatbread can replace pizza dough for a 15-minute shortcut version. Skip the par-bake step and go straight to topping and baking on the middle rack for 8–10 minutes.

Storage and Reheating

Refrigerator: Store leftover slices in an airtight container or wrap individually in aluminium foil. They keep well for up to 3 days.

Freezer: Wrap individual slices tightly in cling film, then place in a freezer bag. Frozen pepperoni pizza slices keep for up to 2 months. Thaw in the refrigerator overnight before reheating.
