This mousse is made entirely in a blender — no eggs, no cream, no cooking. Ripe avocado and banana give it a genuinely thick, creamy texture, while Medjool dates and raw cacao handle the sweetness and chocolate flavor without any refined sugar. It takes about 10 minutes of active work, then the fridge does the rest.

What makes this version work

Two things matter most here. First, fruit ripeness: a soft, spotty banana and a fully ripe avocado (one that gives easily when pressed) are not optional — underripe fruit produces a starchy, slightly bitter result that no amount of blending will fix. Second, blending time: you need to run the machine longer than feels necessary, stopping to scrape down the sides at least once. A full minute of blending after all the ingredients are in is what takes it from chunky to genuinely smooth. A food processor works, but a high-speed blender gets it silkier.

Ingredient notes

  • Raw cacao powder vs. cocoa powder: Raw cacao is less processed and has a slightly sharper, more intense flavor. Regular unsweetened cocoa powder works as a direct swap and is easier to find — the mousse will still taste like chocolate.
  • Medjool dates: These are the large, soft, caramel-flavored dates sold in the produce section. Smaller dried dates (like Deglet Noor) are much firmer and won’t blend as smoothly — if that’s all you have, soak them for 20 minutes instead of 10 and expect a slightly less smooth result.
  • The banana: It does two jobs — sweetness and body. You can’t skip it, but if you want less banana flavor, use a smaller one and make sure it’s very ripe so the sweetness is still there.
  • Vanilla bean vs. extract: Skip the vanilla bean — the flavor difference in a recipe this strongly flavored by cacao is not worth the extra cost or effort.

Storage and reheating

Store the mousse in the fridge with cling film pressed directly onto the surface — this stops the top layer from oxidizing and turning brown. It keeps well for up to 2 days; after that the texture starts to soften and the flavor fades. You can also freeze it in small airtight containers for up to 4 weeks. Thaw overnight in the fridge rather than at room temperature. There is no reheating step — this is served cold.

If something goes sideways

  • The mousse tastes bitter: The avocado was likely underripe, or the cacao-to-date ratio is off. Add one more pitted date, blend again, and taste — Medjool dates are the main sweetener and a small change makes a noticeable difference.
  • It won’t go smooth — there are still lumps: Keep blending. Scrape the sides down, put the lid back on, and run it for another 30–60 seconds. If it’s still lumpy, the avocado or dates weren’t soft enough; a tablespoon of water or almond milk can help loosen things.
  • The mousse is too thick to blend properly: Add liquid one tablespoon at a time — water, coconut water, or almond milk all work. Don’t add more than 3–4 tablespoons total or the mousse won’t set firmly in the fridge.
  • It turned brown on top in the fridge: That’s oxidation from the avocado, the same thing that happens to guacamole. It’s safe to eat — just stir it back in or scrape off the top layer. Next time, press the cling film directly onto the surface before chilling.
  • It tastes strongly of avocado rather than chocolate: The avocado wasn’t ripe enough, or the cacao amount was too low. Add an extra teaspoon of cacao powder, blend briefly, and taste again.

Note: Make sure your banana and avocado are very ripe, as this will improve the flavour of the mousse enormously.

Ingredients
 
 

  • 1 medium avocado flesh
  • 1 medium ripe banana peeled
  • 2 Medjool dates about 40g, pitted and soaked in warm water for 10 minutes until soft
  • ¼ cup raw cacao powder
  • 1 teaspoon vanilla extract or seeds from 1 vanilla bean pod
  • 1 pinch salt to enhance the flavour
  • mixed berries, walnuts, sliced almonds, mulberries, pumpkin seeds, coconut flakes or anything you prefer for topping

Instructions
 

  • Cut the avocado in half and remove the seed. Scoop the flesh into the bowl of a food processor or a powerful high-speed blender.
  • Add the skinned banana and process or blend until smooth and creamy.
  • Drain the soaked dates and add them along with the cacao powder, vanilla extract, and salt. Blend again until completely smooth, scraping down the sides as needed.
  • For a lighter, softer mousse, add 1–2 tablespoons of water, coconut water, or almond milk and blend briefly to incorporate.
  • Divide the mousse between two serving bowls or ramekins. Cover with cling film pressed directly onto the surface to prevent browning and refrigerate for at least 4 hours, or overnight for the best flavour.
  • Serve alone or with a great topping. I used some walnuts, almonds and pumpkin seeds for a lovely crunch and added berries to give the mousse a great fruity twang.

FAQ

Can I taste the avocado in the finished mousse?

No — if the avocado is fully ripe, the cacao and banana completely mask it. The avocado contributes texture, not flavor; a firm or underripe one is the main reason people end up with a mousse that tastes green.

Do I really need to refrigerate it for 4 hours — can I eat it straight away?

You can eat it immediately, but it will be soft and closer to a thick smoothie bowl than a mousse. The chill time firms it up significantly and also mellows the banana flavor.

Can I make this without a food processor or high-speed blender?

A standard blender will work if the fruit is very ripe and soft, but the result may be slightly less smooth. A hand blender (immersion blender) in a tall jug can also work in a pinch — blend for longer and scrape down frequently.

Is there a substitute for Medjool dates if I don’t have any?

A tablespoon of pure maple syrup or a tablespoon of honey (not vegan) can replace the dates — add it to taste rather than all at once. The texture will be very slightly less thick without the dates.

Can I double the recipe?

Yes, it scales up easily. Just make sure your blender or food processor has enough capacity — overfilling is the most common reason the mixture doesn’t blend evenly. Work in two batches if needed.
