This is a from-scratch version of Olive Garden’s Zuppa Toscana — creamy broth, Italian sausage, russet potatoes, kale, and pancetta, all done in one pot and one skillet in 55 minutes. The Cajun seasoning is a small addition that adds a low background heat you’ll notice if it’s missing. It reheats well, which makes it worth making on a Sunday even if you’re eating it on Tuesday.

The short version of why this works

Two things actually matter here. First, the potatoes cook directly in the chicken broth — not separately — so the starch they release slightly thickens the base before the cream ever goes in. Don’t rush this step; a fork should slide through a cube with no resistance before you move on. Second, browning the sausage in a separate skillet and then cooking the pancetta and onion in the leftover fat builds most of the soup’s flavour before anything hits the pot. If you skip the skillet and just dump everything into the broth, the soup will taste flat. Those two steps are the whole recipe.

If something goes sideways

  • Broth tastes thin even after the cream goes in: The potatoes probably needed more time. Pull a cube out and press it — if it holds its shape firmly, keep simmering. You can also mash a few potato pieces against the side of the pot with a spoon to thicken things up without adding anything extra.
  • Kale is tough and chewy: Curly kale needs a full 5 minutes of gentle simmering to soften properly. If yours is still leathery, give it another 3–4 minutes on low heat. Lacinato (Tuscan) kale softens faster if you want to swap it.
  • Soup is too salty: Sausage, pancetta, and 6 cups of chicken broth all carry significant sodium. Use a low-sodium broth if you’re salt-sensitive, and taste before adding any extra seasoning at the end. Adding a peeled, halved raw potato to the pot and simmering for 10 minutes can pull some salt back — then discard it.
  • Cream curdled or looks grainy: This happens when cream hits very high heat. Make sure you’ve reduced to medium-low before pouring it in, and don’t let the soup boil after that point. A gentle simmer is all it needs.
  • Sausage is cooked through but pale and soft, not browned: The skillet was probably overcrowded or the heat too low. Brown in two batches if needed — colour on the sausage means flavour in the soup. Skip the garnish of extra Parmesan if you’re already short on dishes, but don’t skip the browning step.

  • 10-inch skillet or frying pan
  • Wooden spoon
  • Cutting board and chef's knife
  • Ladle
  • Instant-read thermometer (to check sausage reaches 160°F / 71°C)

Ingredients
 
 

  • 1 lb mild Italian sausage casings removed
  • 1 medium onion chopped
  • 2 oz pancetta or 2 slices thick-cut bacon, diced
  • 3 cloves garlic minced (or 1½ teaspoons jarred minced garlic)
  • 6 cups chicken broth
  • 3 medium russet potatoes washed, cubed, skins left on
  • 3 cups kale rinsed, stem removed, chopped
  • 1 cup heavy cream double cream in the UK
  • 1 teaspoon Cajun or Creole seasoning such as Tony Chachere's, adjust to taste
  • 1 teaspoon Italian herb seasoning or ¼ teaspoon each dried thyme, dried basil, garlic salt, and black pepper
  • to taste Parmesan cheese freshly grated, for topping (optional)

Instructions
 

  • In a large pot, bring chicken broth to a simmer over medium heat. Add the cubed potatoes, Cajun seasoning, and herb seasoning. Simmer for 15–20 minutes until the potatoes are fork-tender.
  • While potatoes are cooking in broth, brown Italian sausage in a medium frying pan.
  • Once the sausage is browned and cooked through (internal temperature of 160°F / 71°C), transfer to a plate lined with a paper towel and set aside.
  • In the same skillet with the rendered sausage fat, add the diced pancetta and chopped onion. Sauté over medium heat for 8–10 minutes, stirring occasionally, until the onions are translucent and the pancetta is crispy.
  • Add garlic to the pan with pancetta and onion and cook for an additional minute.
  • Add sausage, kale, pancetta, onion, garlic, and heavy cream to broth and potatoes.
  • Reduce heat to medium-low and simmer gently for 5 minutes, stirring occasionally, until the kale is wilted and tender and the flavours have melded together. Taste and adjust salt and pepper as needed.
  • Ladle into bowls and top generously with freshly grated Parmesan cheese. Serve immediately with crusty garlic bread.

Notes

(Note: If you do not have access to the last two ingredients, don’t worry!!! You can add ¼ teaspoon black pepper, ¼ teaspoon garlic salt, ¼ teaspoon thyme, ¼ teaspoon basil, and a pinch of red pepper flakes.)
If you are not a fan of spicy, you can omit the Cajun/Creole seasoning (red pepper flakes).
If you are a fan of spicy, you can omit the Cajun/Creole seasoning and use hot ground Italian sausage.
I have also done this recipe without pancetta, and you don’t miss it.
Storage
  • Refrigerate in an airtight container for up to 4 days. The soup thickens as it sits — thin with a splash of chicken broth when reheating.
Freezing
  • Freeze without the cream for up to 3 months. Thaw overnight in the fridge, reheat on the stovetop, and stir in the heavy cream just before serving.
Make-Ahead
  • Brown the sausage, pancetta, and onion up to 2 days ahead. Refrigerate and add to the simmering broth and potatoes when ready to finish.
Substitution
  • Swap kale for baby spinach. Add it in the last 2 minutes so it wilts without turning mushy.
Pro Tip
  • Break the sausage into small, irregular pieces while browning rather than large chunks. More surface area means more caramelisation and deeper flavour in every spoonful.

Frequently asked questions

Can I use hot Italian sausage instead of mild?

Yes, and it works well. The Cajun seasoning already adds some warmth, so hot sausage will make the soup noticeably spicy — dial the Cajun seasoning back to half a teaspoon if you go that route.

Can I make this ahead and reheat it?

Yes — it reheats well on the stovetop over medium-low heat. The cream can separate slightly if you bring it to a hard boil, so reheat it gently and stir as it warms up.

Can I substitute something for the heavy cream to make it lighter?

Half-and-half works and keeps the soup creamy without as much richness. Whole milk is thinner and can curdle more easily over heat, so it’s the least reliable swap here.
