Fish Tacos With Creamy Avocado Slaw

These fish tacos come together in 30 minutes on a weeknight with one pan, a blender, and a bag of broccoli slaw. The avocado cream doubles as both the dressing and the sauce, so there’s nothing extra to make. If you’ve never cooked fish for tacos before, this is a good place to start — the method is straightforward and the results are reliably good.

Why this recipe works

Two things make this recipe work. First, the fish is seasoned with a dry spice blend and pan-fried in shimmering-hot oil — that heat is what creates a golden crust instead of pale, soft fish. Second, the avocado cream slaw gets a 15-to-30-minute rest in the fridge before serving. That short rest softens the broccoli slaw just enough and lets it absorb the dressing, so you’re not biting into raw-tasting shreds. Skip the rest and the slaw tastes underdressed; give it the time and it holds together properly in the taco.

Storage and reheating

Store cooked fish in an airtight container in the fridge for up to 2 days. Keep the avocado slaw separate — it will keep for up to 1 day, though it will darken slightly as the avocado oxidizes. To reheat the fish, use a dry skillet over medium heat for 2 to 3 minutes per side; the microwave works in a pinch but softens the crust. The avocado slaw doesn’t reheat — serve it cold straight from the fridge. Assembled tacos don’t store well, so keep the components separate until you’re ready to eat.

Mistakes to avoid

  • Skipping the step of patting the fish dry. Surface moisture turns to steam in the pan and prevents browning. Use paper towels and press firmly before seasoning.
  • Crowding the pan. If the fillets overlap or sit too close together, the pan temperature drops and the fish steams instead of fries. Cook in batches if needed — skip the garnish, not this step.
  • Moving the fish too soon. The fillet will release naturally from the pan once the crust has set. If you try to flip it early and it sticks, it’s not ready. Wait the full 4 minutes before checking.
  • Over-blending the avocado cream. Blend just until smooth, about 30 seconds. Over-processing can make the sauce gluey and can also cause the jalapeño to turn the sauce bitter if it runs too long.
  • Using cold fish straight from the fridge. Cold fillets lower the pan temperature the moment they hit the oil. Let the fish sit at room temperature for 10 minutes before cooking so it cooks evenly all the way through.

Ingredients
 
 

  • 1 pound firm white fish fillets (cod, mahi-mahi, or tilapia), skin removed, patted dry
  • 1 teaspoon chilli powder
  • 1 teaspoon garlic powder
  • ½ teaspoon ground cumin
  • ½ teaspoon cayenne pepper
  • 1 tablespoon fresh cilantro leaves loosely packed
  • ½ medium avocado pitted and scooped
  • ⅓ cup plain Greek yogurt (full-fat for best flavour)
  • 1 medium lime juiced (about 1 tablespoon / 15ml)
  • 1 small jalapeño roughly chopped, seeds removed for less heat
  • 1 teaspoon salt to taste
  • 1 bag broccoli slaw, (12 oz)
  • ½ cup corn kernels fresh, frozen and thawed, or drained canned
  • 8 small (6-inch) flour or corn tortillas warmed
  • 2 tablespoons neutral oil for frying (vegetable, canola, or avocado oil)

Instructions
 

  • Pat the fish fillets dry with paper towels. In a small bowl, combine the chilli powder, garlic powder, cumin, and cayenne. Season the fish on both sides with the spice blend. Heat 2 tablespoons of neutral oil (vegetable or avocado) in a 12-inch skillet over medium-high heat until the oil shimmers.
  • Add the cilantro, avocado, Greek yogurt, lime juice, and jalapeño to a blender or food processor. Blend until completely smooth and creamy, about 30 seconds. Taste and season with salt as desired.
  • In a large bowl, toss the broccoli slaw and corn with the avocado cream sauce until evenly coated. Refrigerate for 15 to 30 minutes — this lets the slaw soften slightly and absorb the dressing.
  • Once the oil is shimmering, carefully place the fish fillets in the skillet. Fry without moving for 4 to 5 minutes until the underside is golden brown and crispy. Flip and cook for an additional 2 to 3 minutes until the fish flakes easily with a fork and reaches an internal temperature of 145°F / 63°C. Transfer to a paper towel-lined plate to drain. Break the fish into large flaky chunks.
  • Warm the tortillas in a dry skillet for 30 seconds per side or wrap in a damp paper towel and microwave for 20 seconds. Layer each tortilla with chunks of crispy fish and a generous spoonful of creamy avocado slaw. Top with salsa and hot sauce to taste. Serve immediately.
